    badger the quiche would be a good start lol, scrambled u can do in microwave and u can do frittatas, omelettes sweet and savoury umm what else gang?

    oh good explanation tink... also if u ar nervous about moving the stuff around for the omelette then just cook it long enough to do the bottom, grate some cheese on the top and bung it under the grill .. voila frittata!!

    my new favourite thing is to whip up a batch of oopsies - great for using eggs, badgerlady - but I make one of them big and rectangular

    then i make a very flat omelette with water in place of cream (no swirling of runny egg at all as it's so flat). I add a bit of chilli and coriander and then pop it onto the still-warm, freshly baked oopsie and roll it up.

    Badger - if you're whipping egg whites they need not to be too fresh ;)

    Ah, well that could be a problem - they're usually still warm from the hen's bottom when I nab 'em!

    Badger, well done on your egg production. Those hens must be very happy with you!

    I adore poached eggs - and these are perfect for you because the fresher the egg, the better the poached egg will be.

    Boil 3 or 4 inches of water in small saucepan. When it's bubbling, take a knife and swirl the water round and round and round (this will help the white to cling together and they'll be a proper 'poached egg shape'). Then crack the eggs gently into the water. Keep the water at a fast simmer. I'm not sure how long they take - I never time them - but I should think 1-2 mins. Keep an eye on them.

    Lift them out carefully with a slotted spoon, and press the spoon on to a piece of folded-up kitchen paper (not very MSE, I know, but I use miles of the stuff :o) to drain any excess water.

    If you use very fresh eggs, they'll turn out plump and shapely. Older eggs means the white will run all over the saucepan and won't cling together in a nice round shape.

    I'd disagree with Shykins about scrambled eggs in the microwave - I've never managed to make them anything other than rubbery.

    Melt a knob of butter in a saucepan
    Beat eggs, season, and add a dash of cream if you like
    Put in saucepan
    Stir
    Have the heat as low as you can possibly get it
    Poke and stir very regularly with a wooden spoon
    Serve before they are perfectly set, as they'll keep on cooking (I like mine pretty runny)

    Me too. Wrong kind of heat I think. And they stink :(

    Scrambled eggs need gentle heat and regular movement to be creamy and delicious.

    poached eggs are just perfect with a large knob of butter melted onto - what i often have for brekkie when im in a rush then just mush it all up and eat with a spoon

  • I always do my scrambled eggs in the microwave.

    It's just perfect for them.

    Just break the eggs in a jug mix in a tablespoon of full cream milk (or cream) for each egg,season add a large knob of butter, zap for one minute, stir and wait until you are ready to eat them then just another few seconds maybe 20seconds and a stir or so then serve with some smoked salmon trimmings and their just wonderful.

    I do watch them like a hawk and don't let them get too well done.

    oh dont take me wrong i prefer scrambled done in a pan but u can do it in the microwave and i was trying to think of something easy for badger, this is how i showed my ds to do them for ease, about 20 secs in microwave then another 30 after a good whisk... as ted says just dont over do them

    i actually bought an egg omelette thingy, u can poach, fry and make omelettes in it as well as cook bacon and other stuff, was about £20 (ish) and well worth it cos now DS can use that to make himself bacon for brekkie (instead of that yukky sugar filled cereal lol)

    right of to check what was good at M&S dine in this week
