Well, Tinkerbell, I made your quiche recipe - an individual one in a little mini tin, with bacon and Cheddar.
And I'm stunned!
The 'pastry' worked perfectly (pastry and me tend to have a fraught relationship) and, despite my pathological hatred of marzipan, it tasted absolutely yummy and almost exactly like normal pastry.
The whole thing was perfection and an utter deliciosity.
And it looked so fabulous that I had to take a pic on my mobile and send it to my OH and DDs, saying, 'Just LOOK at what I'm having for my lunch!'
I was wondering what on earth I was going to eat at those infernal - I mean, thoroughly enjoyable - family buffets over the Christmas period: I shall take two or three big ones of these, in different flavours. Everyone will like them and I'll ensure I give the sausage rolls a wide berth.
Quiche, green salad and mayo for lunch - and I'm on a diet! :eek: All that's missing is a glass of cool white Italian (only joking, Shykins).

I actually prefer the almond 'pastry' to normal pastry now. I take a quiche to parties and BBQs etc (being veggie it's not easy for me at a BBQ). It lasts really well, and you can be adventurous with the fillings too.
If you add a bit of splenda to the pastry mix you can make sweet pasty things - I've done them with egg custard in (low carb) and they work well too.
It's the same mix (but slightly different quantities) for cheesecake base.

You guys are making me hungry with all this talk of scrummy quiche!:D I'm going to try making a crustless version at the weekend as a prototype for something different we can add to our packed lunches during the week. I say crustless - we don't as yet have a food processor or coffee grinder (*hint hint, Gilly Badger!*
) - and it's a bit of a faff making pastry by hand when precious weekend time is so scarce, so just want to try a quick crustless version first and see how that goes. I remember Elona saying she made one with great success.
Hope everyone's doing ok. Work is really manic at the moment for Gilly and myself, so not much time to post here unfortunatelybut initial indications are that our back-to-Atkins-basics fortnight might be paying off. Not wanting to speak to soon though!:)

Sazbo, could you treat yourself to a mini chopper, instead of the huge, expensive food-processor shebang?
I use mine pretty much every day - can't remember when I last got the big one out. Unless you're doing massive quantities, it's brilliant.0 -

That's a good idea xx We were going to get a coffee grinder so we can grind our own flax meal - flax seeds are such impervious little blighters aren't they lol. But wondered if a food processor was best option for whizzing pastry etc? It's not vital though, I can live without it... MSE!

I didn't realise you could buy whole flaxseed. The only type in my supermarket was 'cold-milled flaxseed'.
Ask for a mini chopper for Christmas. They're so fab, I can't tell you (especially for pastry)! Probably won't grind coffee beans though. I broke my last one by seeing if it could cope with frozen Parmesan - it couldn't.0 -

i have a magic bullet which grinds anything including ice and is great for liquidising etc, takes up no space on the worksurface and the fake ones cos about £20 ... pls read this gilly!!!! lol
ooh can we have the pic of the quiche too hc??.. i was going to make one myself this week but still dont have much of an appetiite, really fancy trying the pastry now u said it doesnt taste like marzipan (Which i also hate) especially as ds is wheat freeglass of wine!!!

Whole flax seeds are much cheaper than buying ready ground - especially as Ted says, if you buy them in larger quantities. You can buy 3kg here for less than a fiver although not sure what the postage is. Out of stock at mo but due in very soon.
Also, same as with any seeds, once milled they start to oxidise, so you lose their full nutritional benefits. If they have been sitting on a supermarket shelf for any length of time, then you are definitely not getting them at their best. Far better grind small amounts for yourself - enough for a week, say - and then store in a airtight tub in the fridge. The whole seeds last for ages. Hope that helpsxx
