Just demolished the majority of a cake tin worth of marshmallow crispies. Don't know if there's a recipe up so here mine (well, nigellas)
45g butter
bag of marshmallows
180 - 200g crispies (I've used value, but obviously the quality of the crunch increases with the amount spent on crispies)
melt butter, add marshmallows ( I chop them into quarters) til smooth the add crispies stir til covered (this is where you realise you should have used a bigger pan). Press into whatever greased tin use fancy, and leave to cool. Yummy!!!!!!
I covered mine in sugar strands, you do this before cooling and after pressing. Following pressing you then have to eat off all the bits that got stuck to you (book suggests using plactic gloves....wheres the fun in that?)
People could'veprolly figured all that out for themselves, but I think I may be a little sugar high after all that marshmallow, hmmmmm - Warning, sugary side effects! Now MARRIED!11/09/100 -
have had a conversation with the local healthfood shop owner today re supplying meals to them for sale, she was very interested, so am now very excited! I hope to make a bit of cash doing something I love.
I was thinking of main meal type things, but she gets lots of queries for gluten free cakes too. I have a couple of ideas, but would love to hear about any favourites any of you gals have that I could use - but only if I don't have to pay royalties :rotfl:0 -
hi lesley
i have a friend whose children are 'gluten free' i just make up a normal victoria sponge mix, using the gluten free flour, and bake it as fairy cakes, adding icing once cooked, or stirring sugar strands (but not 00's&000's as they have gluten in them!) into the mix before they are cooked.
probably not quite what you want, but they always go down well with the children!

Well I haven't posted on here for a while but rest assured I have been reading along.
Since moving into my new house I am really loving the vibe here. We buy food together which works out more expensive than it was last year for me to feed myself but we cook together too and that is so nice! This week I have had a beef roast dinner, stir fry, lamb tagine, veggie wraps... mmmm.... and there seem to always be cakes and puddings, so much nicer than looking in the fridge and getting food envy!
But... not many economical meals, apart from couscous! I did make some buns that wouldn't be that expensive and were really tasty.
Spoon sponge mix into bun cases
Dollop a teaspoon of mincemeat on top (last year's... hmmm....)
Invent crunchy topping by smashing up oats, sesame snaps (reduced...), a little butter and sugar and cinammon (along with anything else interesting looking in the cupboard)
Bake until they look done
Now that's not an exact recipe... :rotfl:God is good, all the time
Do something that scares you every day

didn't think GF flour would taste OK as just a victoria sponge, so will try that and see if I can do a full size one0
