    Hi Shaz

The photos are really stunning ! Well done :T

The coconut cake turned out ok but I think I might cut back on the milk a little bit and put a bit more coconut in (my achillies heel ! lol)

I shall make another one tomorrow and see how that turns out.

Just made the cherry jam, so now have 8 nice smelling jars cooling on the counter!! I added a cup of amaretto to the cherries and the house smells wonderful at the moment!

Oh yes, update on the DH job search. He went for a second interview yesterday and starts 13 October, could have started monday, however we are away the following week! So at least one thing has gone right this week!

Anyway, back off to work now as big project to complete by tomorrow morning. Will keep peeking in, keep my sanity that way

    Hugs to all

  • Morning all

Just thought I would pop by whilt the bread dough proves (any excuse :p )

Lovely piccies Shaz... I like the dit birds :D I love birds... my fave at the moment is the itty bitty jenny wren who keeps bugs off my tomato plants ;) .. oooh and the Jays that visit :D

Todays dinner is roast chicken and all the gubbins...
ahhh Weezl..as usual there isn't a "recipe" as such for stuffing...my mama used to make it when i was wee
    • chop up onions and drop in a pan with enough water to cover, and cook until soft
    • throw in dried sage (rosemary, thyme or whatever ones you like) salt and lots of pepper
    • throw in leftover bread -i just rip it into chunks as we like "chunky" stuffing but you can always blitz them in a machine)
    • Bash it to death -you may need to add a drop more water -depending on if you want sloppy stuffing or want to roll it into balls
    • you can also add a skinned sausage -when I do this im quite happy to go without chicken :p ..oh and if you have an egg that needs using up you can beat that in too -off the heat
    • then simply ball or tip over belly pork and cook mmmmm
I tend to make big batches and make into balls then when cooked -freeze them up - great for quick roast dinners or on chicken sandwiches mmm

I have some leftover corned beef hash to freeze up and when i do dinner im doing a huge broccoli/cauli cheese and will freze portions of that too :D

and of course I have more tomatoes to roast off when the oven goes on later :p

Im fighting the urge to make coconut tarts or butter tartlets at the moment -I KNOW I will demolish them if i do :o :rotfl: ....
right i had better get off...have a great day folks :D

I bought the pitted cheeries frozen from asda yesterday for a £1 a pack! So no pitting required unlike the current two bags I have in the freezer that we brought back from kent earlier this year. Let DH pit them:rotfl: he is the cherry fiend after all.
