Hi all, here is my recipe for mexican chicken and beans
1 chicken breast (or thighs thx weezl) pre cooked so good for using up left overs
1 jar Mr T taco chilli beans (could use any others)
    1 jar salsa
    2 tspn cumin
    1 bag value tortilla chips
a couple of spring onions or some chives
some chopped up tomato (however much you fancy)
1 small pot of sour cream
    some grated cheese

put the tortilla chips in the bottom of a casserole dish, shred the chicken then put in a pan with the beans ,salsa and cumin, heat through then pour over the top of the chips, pour over the sour cream then put the chopped tomatoes, spring onions and cheese on the top, bung in the oven for 20 - 30 mins at 180c ,its ready when its all bubbly. Sorry its not very precise but I just kind of throw stuff together and hope it works, this one is very nice. You can make it spicier by adding taco sauce if you like

Sounds yum! Thanx for this one!

Just posted a "recipe" on another thread and crossed my mind it could be useful to you guys too, considering SP sardines in tomato sauce and pasta are pence!

Basically, cook pasta then stir in a tin of sardines in tomato sauce :D We find the tin is enough for 2 portions of pasta, but if making more I heat a tin of tomatoes with the sardines and sauce to make it stretch.

    Hi all,

Just dipping in and out in between catching up on all the gardening, decluttering, baking, freezing, cleaning, organising etc etc I should be doing, but just wanted to say Cheryl I never soak lentils. Ever. I soak other pulses, but just cook lentils from dry- I'm sure my packets don't say that? I've just been to check mt Natco packet of red lentils and that says no need to soak. I cook brown/green/Puy/Continental lentils like that too with no problem. Might make it easier to hide them!

  • have just made the first trial recipe for my healthfood shop venture - gluten free vegan brownies. Not bad at all, soft and gooey, and very chocolatey. You can taste the GF flour a bit, but it's not too noticeable and for those of us who HAVE to be GF (coeliac) they were a lot nicer than a lot of the stuff that my brother (who IS coeliac, I'm not) has to put up with.

If anyone wants it, this is the link http://community.livejournal.com/vegancooking/1849262.html

to make them GF, I just replaced the flour with GF flour, also added some GF baking powder. If you don't need to be GF and just want to not use eggs for some reason (egg free diet, cost cutting etc), they would taste even nicer with ordinary flour
  • didn't think GF flour would taste OK as just a victoria sponge, so will try that and see if I can do a full size one

as the GF flour has a different taste, i find it does need to be quite well iced! or, the sprinkles in it, add a sweetness. x

I use the great scot red lentils and you don't have to soak them,I thought you had to soak other colours though, but I've not bought any other kind before so I'm probably wrong :o

Just checked my lentils bag - split red lentils, soak for 12 hours minimum before use, and must NOT be cooked in a casserole or slow cooker!!

Definitely need to check out other brands me thinks.....
    Cheryl
  • i've got red split lentils from morrisons. they don't mention soaking at all!

but i did look at getting some beans and casserole/soup mixes, and they all said soak 12 hrs/overnight etc, i didn't get any...that requires knowing what i am cooking and might want to add them to! ( i do generally know what i'm cooking!!!:D , but often add beans etc as an experiment and depends upon what tins i have in the cupboard! or i have a spare 10 minutes and decide to make a quick casserole/pasta sauce for the freezer!)

can you soak beans etc, and then freeze them ready to add to sauces as you need them?
