Munchki - yes, for each 1lb of fruit use 1lb sugar.
I've just looked in my jam book and it says that because cherries are naturally low in pectin, make sure you use sugar with added pectin (you probably already know that though).
Cherry Jam is one of my favourites - wish I managed to find some as cheap as you did ! Well done !

I had to pop into Sainsbury's today for some shopping for work and while I was in there they had supercook marzipan reduced from £3.99 to £1 :eek: . I must confess I bought some as I've been toying with the idea of making Xmas cakes instead of the puddings and this kind of made up my mind for me.
They also had cooking chocolate (Dr. Oetker (sp?) for 44p reduced from £1.88 !!! I bought a 'few' packets of that too :T .
Can still get some good bargains on the Supercook/Dr Oetker products, I've stockpiled on red food colouring (15p) and hundreds and thousands. I've got 2 girls so pink icing is a must in our house! I always have a little look at that aisle when I go shopping just to make sure I'm not missing anything!:T0 -

hi plum pie here is an easy fudge recipe
tin condensed milk
150ml milk
1lb demerara sugar
4 oz butter
gently heat all ingredients together until sugar disolves
bring to the boil and simmer for 10-15 mins stirring continuosly
remove from the heat and beat until grainy
add choc coffee ,coconut at beating stage
refridgerate till set

thanks for this you've made it sound easy ...............made fudge a couple times only really happy with it once!!!
Is all that soft ball stage i get too caught up in technical and stop being artistic
What quantity choc do you add to a batch this size??

hi shaz i would use 6oz of chocolate for this mix or 4oz of raisins and a tablespoon rum for this ,or 4 oz of chopped nuts
you can even use low fat condensed milk in it0
