    ITALIAN BULGUR AND BEAN SAUSAGE ROLLS
    makes 6-8
    1. 1 1/3 cups boiling water
    2. 2/3 cup uncooked bulgur
    3. 1 1/2 cups cooked red kidney beans -or 15oz tin drained and rinsed
    4. 1/4 cup fresh parsley -chopped
    5. 2tbs fresh basil-chopped
    6. 1tsp fresh oregano-chopped
    7. 1tsp small capers -drained and rinsed
    8. 1tsp minced garlic
    9. 1/2 cup dried breadcrumbs
    10. 1/2tsp fresh black pepper
    11. 1/2tsp coarse salt
    12. 1 egg -beaten
    13. 1tbs olive oil
    14. 1tbs tomato puree
    15. 6-8 fresh chard leaves
    16. veg stock or water
    • pour the boiling water over the bulgur and cover -allow to steam for about 10mins
    • in a processor combine 3-8 until fairly smooth
    • drain the bulgur and add to the processor with 9-14 and pulse until just combined
    • chill for about 30 mins
    • steam the chard until pliable -about 30-60 seconds
    • form about 1/2 cup of the mix at a time into a sausage and roll in a chard leaf-like making a pancake roll -tucking the edges in as you go
    • fasten each with a toothpick -repeat until mixture is used
    • bring a pan of water/stock (just enough to cover the rolls) to a simmer and simmer the rols for about 10mins -until heated through
    • lift out and drain -serve on a bed of pasta with a tomato sauce

    PORTOBELLO SAUSAGE
    makes 6-8 sausages or patties
    pre-heat oven to 450f/230c
    1. 12oz portobello mushrooms -cut into chunks
    2. 1/2 cup chopped onion
    3. 2 cloves garlic-chopped
    4. 1tbs olive oil
    5. 1 1/2 cup cooked black beans -or 15oz tin -drained and rinsed
    6. 1/4 cup chopped parsley
    7. 1tsp coarse salt
    8. 1/2tsp ground black pepper
    9. 1tbs lemon juice
    10. 1/2 cup fresh breadcrumbs
    11. 2tbs parmesan cheese
    • toss 1-4 in an ovenproof baking dish -roast for 8-10 mins until the brown juices are running out
    • spoon mix into processor with 5-9 and process briefly until combined but still chunky
    • tip into a bowl and add 10 + 11 and mix well
    • using wet hands shape 1/2 cups of the mix into patties or sausages about 1/2" X 3"
    • panfry over a medium heat or grill until heated through(about 5mins per side)
    • serve with salsa or sour cream

    WOW is all I can say I am so impressed. I have spent the last few days reading this thread and I amazed and it has really made me think about how much money we waste!
    A quick Intro I'm Louise Partner to Jake and mum to ElleMay 8 and Stanley 2. I will be avidly watching this to get tips and recipes to lower my food bill currently £90 a fortnight including cleaners, toiletries, catfood and nappies. I am hoping to seriously reduce this.
    I have already made the coconut cake (Yummy) and started to add some of the recipes into my food plan. Looking forward to more usefull hints and tips.

    WILD MUSHROOM SAUSAGE WITH WALNUTS
    makes 6-8 patties or sausages
    1. 1tbs butter
    2. 8oz wild mushrooms
    3. 2tbs chopped shallot
    4. 1 cup cooked white beans
    5. 1/2 cup cooked white or brown rice
    6. 1tsp coarse salt
    7. 1/2tsp ground black pepper
    8. 1/4 cup chopped toasted walnuts
    9. 2tbs chopped spring onion
    10. 1/2 cup fresh breadcrumbs
    11. 1 beaten egg
    12. 1/4 cup milk
    • melt the butter in a large pan and add 2+3 -saute for about 5 mins -until the juices are released
    • add the mix to a processor with 4-9 and process to combine -but leave a bit chunky
    • place mix in a bowl with 10-12 and mix until combined
    • form 1/2 cups of mix into 1/2" x 3" sausages or patties -chill for 1 hour to firm up
    • pan fry over a medium heat in a little oil until hot n crispy -about 5 mins per side

  • Mrs M- where did you learn to cook? You sound like the perfect wife to me; baking, cooking, growing veg, saving housekeeping money so your hubby can have beer money :)

    VEGETARIAN KISHKE IN LEEK CASINGS
    makes 6 sausages
    pre-heat oven to 350f/175c
    1. 6 leeks -1-1 1/2" in diameter
    2. 2 celery stalks -chopped
    3. 1 large carrot -grated
    4. 3tbs veg/olive oil
    5. 1 cup matzo meal or fresh breadcrumbs
    6. 1/4 cup raw wheatgerm
    7. 1tsp coarse salt
    8. 1/2tsp ground pepper
    9. 1 large egg
    • trim the leeks -take off the root -leaving about 6" of the green bit in tact
    • blanch them by plunging into boiling water for 2 mins -then plunge into cold water
    • push out the centres -leaving the outer whole -then chopp the middles
    • in a processor place the chopped leek and 2+3 and pulse until finely chopped
    • add 4-9 and pulse until the mixture holds together
    • carefull stuff the leek skins with the mixture (any leftover can be baked in blanched cabbage leaves or foil)
    • place the leeks on a greased baking sheet-cover with foil and bake for 25 mins

    shoulda have got them and baked lots of cakes to freeze for the future ;)

    I wish I could get bargains like that, I'm paying £1.30 for 6 free range eggs :eek:

    I've got a swanky (lovely!) side by side fridge/freezer, which is always full, so no room I'm afraid. I'm currently trying to use the stuff I've already got in there.

    Thats the recipes requested so far.... now i have read them properly im tempted to try some myself :p ... isn't it strange that you can have so many recipe books/mags that some recipes totally escape you :confused: mind i did have 85 books -not including the mags last time i counted :rotfl: ...

    Today i have made a loaf of bread and concocted a chicken canelonni for dinner...using leftover chicken, veggies from the garden and a tub of HM cheese sauce from the freezer - the filling was nice -well i had to check it for seasoning :D ... will report back if its a hit ;)

    Sian...ooooh noooooo .... im not saving housekeeping money so hubby can have beer ... im not THAT nice :rotfl: .
    I get my housekeeping off hubby, the bills come out of hubbies wages and that leaves him some for himself ;) -what he does with it is up to him ... if i want anything i will get it out of the housekeeping and to be honest hubby wouldn't care if i spent it all on myself :p ..i just won't anymore :D
    todays trip is a leaving do for one of his bosses so it was a trip to a brewery and he has just rung to say they have gone back to his house for more beers -the majority won..so as its a minibus he is there until the others have had enough :rotfl:-his mates can't believe i don't give him grief :confused: but its not that often he goes out..plus being a man i know that those wives who moan about it just make it more appealing to the men -im not silly ;) -on the plus side -he just told me the guy has got a huge apple tree that they don't use... so im hoping for a trip there at the weekend -:j
    I went straight to catering college from school and qualified 2 years later as a chef ;) -just never did it as a job as it was the "devils job" so i just use it at home :D
    So far the savings have paid to repair the car and then when we had to go back to spend 3 weeks with sis -even though the army paid all the travel expenses we still had to cover the rest ;) -but now im back with vengance... we were hoping to get a holiday to Kefalonia late next year ..but long term im just trying to get a bit of a nest egg behind us for when we leave the forces in 4 years.. hopefully so we can sell the house we have at the moment in th UK and get something with more outdoor space so i can grow more and save more :D

    heck there is my life story :rotfl:
