Buying chicken carcasses
I never seem to roast enough chicken to provide enough stock for all the soup that I make. What is the going rate for a chicken carcass from a butcher, and is it something butchers commonly will be likely to sell?

Fish sauce
Just discovered a bottle of fish sauce in the cupboard, it's opened but well in date still but says that it should have been put in the fridge. Is it safe to use? I keep ketchup etc in the cupboard and don't think twice about using them but as it's fish I was wondering if it's OK? Sorry am paranoid about this sort of thing!
