Buying chicken carcasses

I never seem to roast enough chicken to provide enough stock for all the soup that I make. What is the going rate for a chicken carcass from a butcher, and is it something butchers commonly will be likely to sell?

    neither do I! that is why I 'store' carcasses in the freezer until I think I have enough (three or four) to make a decent amount of stock. I haven't heard of butchers selling chicken carcasses - most would use them for stock themselves - BUT, its always worth asking a local butcher or a deli.

    I have not heard of butchers selling chicken carcasses. However there's a really good recipe for poultry gravy on Jamie Olivers site and he uses chicken wings and they are relatively cheap. Would they work?
    If you have a lidl near you they have chicken legs on offer next weekend at £1.12 a kilo. You could stock up, make stock and have lots of meat.

    Do you live within driving distance of A Moy Park? They are the biggest producers of chicken to the supermarkets. They don't sell the carcasses to the public but when you can buy a whole big bag of chicken portions for a quid, chickens for as little as £1.50, they are worth a visit to stock the freezer

    One of the poultry producers who sells at our farmers' market sells carcasses for 50p each.
    As for butchers - I think it will vary - some will buy in ready portioned chicken, others will break them up themselves. I think it fine to ask your regular butcher.
    I also keep a "stock drawer" in my freezer which I fill with odds & ends, eg: last nights' chicken curry was made with portions of thigh meat. The skin and bone went into the freezer (only a little but it adds up).
  • We buy chicken carcasses from the local butcher. They order them in for us. A big box costs between 7.50 and 9.50 for around 50 carcasses but they don't have as much meat on them as self butchered ones. We feed them to our dogs, they are on the raw food diet.
  • Lots of places in London do carcasses at varying prices but thats only useful information if you live in London.
