I've got an over ripe pineapple siiting in a bowl, rather than throwing it out just wondered if anyone has a recipe for a nice pudding or anything else for that matter, that will let me use it up?

    although I am not a big fan of fruit with savoury things, pineapple "works" quite well with bacon, gammon or ham. so if you have any bacon maybe you could grill or fry it withthe pineapple. yum.

    or stick the pineapple in the fridge and have it chilled on it's own. they are deliciously sweet. mmmmmm.

    pineapple upside down pudding.

    Sliced pineapple in the bottom of a greased cake tin. Spoon a bit of syrup over them, then cover with cake mixture. Bake in the oven, just like a normal cake. Serve with custard.

    Oh I am so glad I didn't read this one last night before bed as then I would have had 'the fancies' on me!!

    That pineapple upside down pudding sounds really scrummy! I'm happy that I've had my lunch so have a full belly right now, although would still be able to squeeze a slice of that in!

    *wanders to the kitchen thinking hmm something sweet but still allowed on my diet...*
