I remember my mum scrimping and scraping to get me the ingredients for my school christmas cake make when I was 9. all the best ingredients mind you
and we had to attack it with a hammer and chisel to get through the icing honest to god we did
then threw the rest to the birds

Ingredients
1 fresh pineapple
1 tsp ground ginger
1 lemon, juice only
Method
1. Cut the pineapple into 2cm/3¼in; slices and cut off the skin. Lay the slices on a grill pan covered in kitchen foil. Mix the ginger with the lemon juice and, using a pastry brush, drizzle the juice over the pineapple slices. Leave to marinate for 2-3 hours.
2. Preheat the grill, and grill the pineapple until slightly golden brown. Alternatively, wrap each pineapple slice in foil and place on a hot barbecue for 2-3 minutes0 -

I love pineapple with gammon or even a burger, but I prefer tinned pineapple for that.
I'm not into pineapple fritter but I love apple fritters especially if they're dipped in cinamon and caster sugar, and I haven't had that for ages, I feel like running into the kitchen and having that for supper ;D0 -

pineapple upside down pudding.
Sliced pineapple in the bottom of a greased cake tin. Spoon a bit of syrup over them, then cover with cake mixture. Bake in the oven, just like a normal cake. Serve with custard.

Although it's a bit late, pineapple is nice cooked on the BBQ. Sprinkle on a bit of brown sugar if you want (or drizzle a little rum), wrap in tin foil and throw on while the burgers are being eaten.0 -
