cheese and potato pie.. the spuds are on!

hi has anyone got a decent cheese and potatoe pie recipe? the spuds are cooking and i have cheese in the fridge waiting just unsure of how to finish it off.. im serving with canned beans or spagetti... help is needed please.... ;)

    We always fry an onion and add to the mash. We mash as normal add a little cheddar or whatever we have in , add the fried onion then put in oven dish and sprinkle with more cheese on top. Some people put slices of tomatoes on the top with the cheese:confused:

    It freezes well and keeps for a couple of days in the fridge.

    We also do similar with bubble and squeak, but just add whatever left overs we have in the fridge.

    I assume you are using a ready made pie case?
    This is the type of dish that you just can't go wrong with.
    You'll need to sweat off some onions though, and just layer them onions, potato, cheese, onions, potato, cheese, etc finishing with a layer of cheese.
    Bung it in the over at around 200 for half an hour or so - maybe just a bit less.
    Delicious.

    Do you mean a pastry case? I never bother with that, just the potatoes, onion and cheese is lovely in itself, although maybe a bit like baby food!

    It is delicious served with crusty french bread and baked beans.

    Never used a pie crust with Cheese, Onion and Potato Pie :confused: It was always a dish made to use up leftover mash in our house and not pastry crust required.

    Add grated cheese and lightly sweated onions to the mashed potato, bung in the oven until golden and bubbling - voila!

  • I love this dish and always put a chopped leek in with the potatoes to make the mash mixture extra nice. Also put some juicy sliced tomatoes on top of the cheese (I think red leicester works best )before putting in the oven for 20 mins .
    We serve ours with fresh broccolli and the kids adore it.
    Pure comfort food !!

    I might make this tonight, got some spuds need using ASAP never thought of this, think I have all that is needed in and it sounds scrummy!

    Any ideas how much cheese, onions etc ? I have about a kilo of spuds.
    One day I might be more organised...........:confused:

    That's the beauty of it, it's as much of things as you've got. Obviously the potatoes are the bland bit, while the onions & cheese provide the flavour, so it's down to your own tastes (or in my case, what I can get away with ;) ).
