cheese and potato pie.. the spuds are on!

    Hoping that Squeaky or someone can point me in the right direction because I'm not quite skilled enough yet to find exactly what I'm looking for using the search facility.

    At work today someone had left bought cheese pie in the staffroom. DD wanted to try it so I let her and she loved it. Wants us to make cheese pie together next week.

    Can anyone help with a recipe? I think this one may have had potato in it as well.

    Thanks in advance - 3rd day in a row and she's eaten her dinner again. Want to reward her for her efforts by us making something she really wants to eat.

    Can't be bothered to trawl the indexed collections but there is a recipe here for cheese and potato pie - a much loved family favourite when I was a kid and one my 52 year old brother still asks mum to make.

    You can eat it as above or use the mixture as a pie filling - we used to have both

    Homity pie is similar but has vegetables in it as well.

    my recipe for cheesy potato pie is
    A good quantity of mashed potato
    a couple of handfuls of mature cheddar cheese (mild wont do)
    a dab of made mustard (dijon or english)
    salt and pepper
    some slices of tomato to decorate the top (optional)
    a few dabs of butter or some olive oil

    Mix the potato and cheese together with the mustard and some salt and pepper if needed.
    pile into an ovenproof dish and arrange the tomato slices on top or fork the top of the cheesy mash.
    dot with butter or sprinkle with olive oil
    place in a hot oven until the top is golden and crusty
    serve.

    I do mine with just cheese and mash, some people use a pastry base which I've tried and although its very nice its just extra calories that I don't need at the moment:D

    Hardest thing is going to be choosing which one to make - but it will get rid of all the cheese that seems to be in my fridge and getting towards the end of its useful life.

    Did you know you can grate cheese and then freeze it? In fact you can freeze the blocks but when defrosted they are crumbly and not good for slicing. You can use the grated cheese straight from the freezer without defrosting. I buy it on offer and grate the lot in a food processor then store it in smallish bags.

  • I didn't know that - brilliant.
    Another tip for saving a bit of money, and one I will most definitely share with my mum, because she always seems to have mouldy cheese in her fridge (not good mouldy).

    You beat me to it...! DH get's fed up grating 2 - 4 blocks at a time :p

    I do this all the time. I also freeze feta and morzorella (which I use only 1/4 on a pizza, or the pizza gets soggy... so dice and freeze for the next pizza!)
    We spend money we don't have, on things that we don't need, to impress people we don't like. I don't and I'm happy!

    yummm my nan used to make this and was delicious - thanks for the receipe links above, will be making one over the weekend now!!
    At least the fish fingers are still frozen, that's what I keep telling myself (Truly Madly Deeply)
