Having read about everyone's cheese pie last night I decided to make one for lunch today, it was yummy, used a leek I had in the garden and fried that with a couple of chopped bacon rashers as I was a bit short of cheese. thanks for the idea.0

I was also way too tempted after reading this! My cheese and potato pie is in the oven...mashed up pots with fried onions and cheese and put it on top of baked beans (why wash another pan?!) and have some veggie sausages to go with it. Looks and smells delicious!Official DFW Nerd Club - Member #398 - Proud To Be Dealing With My Debts :T

I make this but my version is (yet again) different. I put a layer of baked beans on the bottom of the dish, and then top it with a cheesy mash, plus extra cheese on top. It's a good meal for the children when they haven't finished some baked beans I opened. Mind, some of the variations here look yummy too.
Same hereWe call it Cowboy Pie - DD loves it.
I usually mix any leftover mince and onions/bolognse with the beans then top with the cheesy mash and a mxture of grated cheese and breadcrumbs. Or i use a tin of beans and sausage as the base for a change.
I think this is like the 'Corned beef hash' thread - theres no one way of making it, everyone has their own way either because of where they live (i can tell who lives up north by the way they make corned beef hash lol) or what recipes they have been passed down etc. I love to nosy about how other people make stuff lol

Ooh I do love a cheese and potato pie! We had it all the time when I was growing up and money was tight. I now make it for my O/H who had never heard of it before and he insists on having it every week now. I make it to my mums recipe... boil and mash some potatoes, put an onion and cheese in a food processor and whiz it up till mixed. Cheese and onion mix goes in the bottom of an oven proof dish, topped with mashed potato roughed up on top with a fork so it goes crispy in the oven. I love layering it in this way so you get to enjoy the difference in texture between the melted cheese and the mash. I like it with a few rashers of bacon on the side but O/H is a veggie so it's quorn sausages these days.
I'm off to see my mum tomorrow so I'll have to pick her brains for recipes of my other childhood favourites. I'm really looking forward to her cheese and tomato rice dish, another cheap and easy one! Once I've got the recipe I'll post a thread and share.0 -
