cheese and potato pie.. the spuds are on!

  • Saw this thread the other day and knew i had to try a cheese and potato pie! It was something I'd never thought to make before.
    Well, I made one last night.:D It was yummy. I used red cheese, and added some cream cheese to the mash, onions too and topped with a pastry case. It went down really well. And it used items that are always in. So it can be made when it looks like theres nothing in!

    I knock up a lot of these.

    In my opinion, the best ones are 2x weight in potato to 1x weight in cheese.

    1 pound of potatoes
    1/2 pound of cheese - mature/vintage cheddar or red leicester is good. But a hard cheese and more taste = better

    Peel/slice potatoes thinly while boiling the kettle.
    Put the potatoes into a saucepan with the hot water (this just saves time as thin ones take less time to cook and the water's already hot).
    Bring spuds to the boil (thin slices should take 10 minutes from when the water is boiling)

    Drain the potatoes and mash. Now, at this point, I personally just mash them with a knob of butter (well, marg for me). I don't add anything else (no milk, salt or pepper) but those are personal taste. I also don't cream the potatoes. I just mash them with a fork. I like the lumpiness rather than ending up with a "smooth/puree" of potato which I think would make the pie sloppy.

    While the spuds were boiling, grate up the cheese.

    Put a bit of the cheese aside (say 1/5th) for the top.

    Mix the main bulk of the cheese with the potato and put it into a casserole dish. Put the final 1/5th of cheese on top.

    Bung in a pre-heated oven (190/375/gas 5) for about 20 minutes, until the cheese is browned and lovely looking.

    I like to serve it with baked beans, but if I've got none, then a dollop of brown sauce.

    I find the 2:1 mix ratio means it's really cheesy.
    No point using bland cheese either or you won't taste it.

    For a variation, I like to chuck in some fried onions too. Mix these in at the same time as combining the cheese/potato.

    This was one of the first recipes we made at school in cookery class....or Home Ec. as it became.
    We used to add a sliced tomato down the centre on the top before baking.

  • I do a similar sort of thing to the above. Just boil my potatoes and mash them. Throw in my cheese. More the better for me. Mash again with the cheese. Put it in an oven dish. Slice some tomotoes and more cheese on top. Pop in into the oven for around 20 - 30 mins as above. I also add onion on times and also serve with beans. I do them and freeze them often.
  • i do very similar but mash up with olive oil and add wholegrain mustard which brings out flavour of the cheese (according to old home ec. teacher:confused: )-or any old mustard i happen to have around. recently been doing with horseradish mustard which gives it a nice "edge".;)
    usually serve with roasted tomatoes and slow cooked onions. if my hungry daughters need even more filling up they will have some baked beans with it!:D

  • We add some lightly fried onions in with ours. So mash spuds, onions and cheese with a cheese topping and sometimes a sliced tom on top...we serve with beans

    I make this but my version is (yet again) different. I put a layer of baked beans on the bottom of the dish, and then top it with a cheesy mash, plus extra cheese on top. It's a good meal for the children when they haven't finished some baked beans I opened. Mind, some of the variations here look yummy too.
