cheese and potato pie.. the spuds are on!

    My moms special family recipe!!!! Small fairy cake size cheese and potato pies, pastry bottom with cheese and potato and onion filling topped with cheese - only consideration salt pepper and extra mature cheese. Ahhhhhh she will kill me giving away family recipe.

    Tasted by many, loved by loads, hoarded by me when I get chance - ahhh roll on friday!!

    its sounds cheap to make but got no idea how to make it, so i thought i would ask on here

    I have made this before, it is simple! I am sure there are loads of versions but this is how I have done it in the past:

    Roll out some pastry and put it in your pie dish. Cook the pastry (blind cooking, I think this might be called).
    Cook and mash some potatoes with plenty of butter, cheese, milk/cream. Onions go nicely in there too.
    Put the mash into the pie pastry. Grate some more cheese on the top, bake in the oven until golden on the top.

    where i live we miss out the pastry bit and it is usually served with tinned plum tomatoes very simple filling and tasty .
    you can add a touch of mustard to it ,it brings out the flavour of the cheese without having to use to much

    I normally soften a chopped onion in butter....then mash spuds....add mash, onions and lots of grated cheddar.....then add more grated cheese on top and put under grill.

    ive been cleaning all day and im eshausted so fifgure i deserve some cheese and onion pie. My mum used to make it as kids. Its funny when it strikes me my mum was slightly more old school than i realised.

    So ive not made one myself so this should be interesting. I wish i had bacon defrosted then i could add it. Mmmmm. I have baby pots with skins on, could i mash those?
    A little nonsense now and then is relished by the wisest men :cool:

    Zippychick - yes you can use the baby potaotes with their skins on.

    I find baby pots mashed with a fork, then mixed with a generous dollop of creme fraiche, salt and pepper, and maybe a squeeze of lemon juice delicious!
