That's the beauty of it, it's as much of things as you've got. Obviously the potatoes are the bland bit, while the onions & cheese provide the flavour, so it's down to your own tastes (or in my case, what I can get away with ;) ).

I love it with loads of cheese.

Its perfect comfort food for me :)
Sometimes it's important to work for that pot of gold...But other times it's essential to take time off and to make sure that your most important decision in the day simply consists of choosing which color to slide down on the rainbow...

You can also add a small amount of english mustard to the mixture. I don't really like mustard but you can't taste it and it really seems to bring out the flavour of the cheese, meaning less can be used, costing less money ;)

My nan puts rashers of bacon and slices of tomatoes on hers.
Chopped bacon could possibly be nice.

I like to add a few bacon bits (pre-cooked).
I've never tried it with leeks as springchick suggested.
Got some growing in the garden so I might try that tommorrow!

My 3 year old loves cheese and potato pie. We serve our with either salad - in the summer or beans and sausage or just beans in the winter - yum. :D
