  • Thanks for the beef info maman. Tonight is lo sweet potato/celeriac gratin, brussel sprouts, cauli, carrots with Sainsbobs healthy beef quarterpounders oh and a bit of bisto best for the veggies :D.

    It's my own recipe:

    1 large onion, sliced
    1 red pepper, chopped
    1 aubergine, chopped
    1 large courgette, sliced
    Green beans, cut into 2cm pieces
    2 cloves garlic, crushed
    Tin chopped tomatoes
    Tomato puree
    Oxo cube
    Dried Provençal herbs - to taste, approx 2 tsp.

    Soften the onions in fry light in a large pan, add all other ingredients, bring to the boil then simmer until veggies are tender.

    Initially it may seem to lack liquid but once it starts to cook the vegetables release fluid and it gets wetter. I cover the pan to start with but then leave the lid off so the juices are reduced.

    This makes plenty so it would be great for batch cooking and freezing.

    Sorry I've been AWOL for a while, just been mad busy with life and everything that goes with it!

    I can't remember where I am in the challenge, but I have lost a further 4 pounds since I last posted.

    Are you saying you do Bisto gravy for the veg to go with the yummy burgers beg? Interested to know as I'm generally boring and have chips, onions and mushrooms.

    Ha ha, maman. I don’t think there’s much to concentrate on. Dropped back in league to 3rd, no one really near behind us to threaten that place. Likely to take a hammering at Ibrox on Saturday too.

    candyapple, years ago I heard Jamie Oliver say there’s no need to brown the meat before putting in the xlow cooker, so that’s been good enough for me ever since.

    10 syns consumed today – happy with that.

    Friday

    Breakfast: grapefruit, boiled egg
    Lunch: out with friend (if storm Gertrude allows us – it’s pretty awful just now)
    Dinner: Singapore noodles with prawns ( ½ ) , tropical fruit salad
    Snacks: WW yogurt, crudites

    See you all tomorrow.
