I want to make a potato bake what do i need to make a low fat recipe apart from potato

Many thanx purplepixie..i decided to cook some new potatos put a whole in the middle and put garlic butter in them..then popped them back in the oven for 15mins in the end..really nice with the salmon and veg umm ummon this day 23/05/1430

For a healthy tasty alternative instead of using cheese sauce try diluted pureed sweetcorn & top with a very thin layer of grated mature chedder;)Post Natal Depression is the worst part of giving birth:p

can anyone help me find the recipe for that potato and onion bake that gets mentioned on here every now and again? I've looked on the mega index but cant find it in the potato recipes. I bought heaps of new potatoes on offer and now I'm starting to get very bored of them!0

.....and cheese, I'm fairly sure. Isn't it sliced potatoes and onions in a creamy cheese sauce? Possibly milk/cream instead of stock.
Or I might be thinking of something completely different.

Potato,onion and bacon hotpot
This is one of the most delicious dishes I know.
2hrs cooking, serves 4-6
Slice a medium potato per person into thin slices(about 2mm thick)
Slice one large onion(or 2 small ones!)
Chop up some bacon or ham - 1 rasher per person is what I ususally use,but it depends on how much you can spare.
Make a basic white sauce,add cheese if you want(I do).
Sauce - melt a tbsp butter,add a tbsp flour cook until sandy in texture(a roux).Gradually stir in about half a pint of milk.Stir until thickens.
In a deep,greased oven-proof dish layer the potatoes,onion and bacon,season with pepper(no salt because of the bacon)
When you have put half the ingredients in,pour on half the sauce.
Continue with the layers,ending with potato.
Pour on the rest of the sauce.
Bake in the oven at 200c covered for 1 hour.Then take of the lid and bake for a further hour at 180c.
It's easy to increase/decrease quantities for this dish.The long cooking is the secret.
I serve it with carrots and a green veg.0 -
Thanks for your help guys, I'm really wishing I had some cheese and/or bacon now but going to the shop would defeat the object of my 'using things up' dinner plans. I had a search around some old threads and I think this is the kind of thing I am after...
"A dish I used to make often years ago was using slices of potato & onion in a deep dish & pouring a stock to cover it about halfway up then roast in the oven for about 40mins. The top layer of potato came out lovely & crispy. It always went down a treat & a suitable accompaniment for many dishes"
Any idea what temperature I should do this at?0
