I've just popped mhe's potato pie in the oven for OH's supper when he gets home from college ... I might just have a portion too :D

Thank you mhe, the potato pie was delicious and I have a portion left over to put into OH's lunch box. I did the potato, onion and baked bean layers and repeated, but also sprinkled some italian herbs over the beans. The top layer was sliced potato. In the oven for 50 minutes with foil over the dish. Then I took the foil off to brown to potato. Finally added grated cheese for a further 10 minutes. Delicious and a very cheap supper dish :D

Slice some potatos into circles keeping skins on (healthier and quicker!)
Arrange on the bottom of a cass dish.
Slice an onion - chuck on top.
Spoon over half a standard size tin of baked beans.
    Another layer of potato circles
    Another layer of onion
    Another layer of beans
    LAst layer of potatos
CAn add layer of sliced tomato to top now to stop potato crisping too much or cover with foil.
Bake in oven 200c for 45 - 50 mins Never tried it in SC but im sure it would work.

If you dont like onion leave them out!
Can also use up left over veg in a layer as well.

MY kids love this for tea - often have it with just veg so even cheaper!!

I made this today and my children, who are going through a fussy stage, ate the lot and asked for more ! They have always pushed beans away before today !!! I am chuffed to bits - finally a recipe that we ALL like !

    Thank you very much :)

Im glad you enjoyed it - my kids love it! Was it cooked in the 50 mins as justamum had to leave it in for an hour and a half . Maybe that was because it didnt have two layers of beans in it because mine never takes more than an hour. I put it in the oven and then start on the packed lunches and leave it to cook on its own - foolproof!!

  • Hi everyone,

I'm after some advice please. I cooked a cheese, broccoli, pollock and potato bake for my tea tonight. Unfortunately the potatoes took ages to become soft (nearly 50 mins at gas mark 6-7). They were put in raw so what should I do next time? Cook them first or do it at a different temperature? If I need to cook them do I slice first or not? Would microwaving them help?

Thank you for any advice. It's a wonderful board and hopefully I can contribute more in future.

You're right in your thinking about parboiling them first. Slice and then parboil until they are almost ready - but not quite! Then pop on top of the rest of the ingredients. I find a little coating of butter or olive oil helps brown them off.

  • Thank you very much. I was worried about them disintegrating if boiled in slices. I just added a bit more grated cheese to get a lovely brown top.

For potato bakes I normally par boil the potatoes for about 10 minutes (sliced) and put everything in the dish and bake for 20-30 mins on number 4.

  • Does enough for about 2 people:

Chop 4 medium potatoes into slices and parboil.
Layer in an oven dish with frozen broccoli, frozen white fish cut in to chunks, topping with a layer of potatoes.
Pour over cheese sauce and sprinkle on grated cheese.
Bake in oven (gas 6) for ~20 mins.

Cheese sauce (if you need it):
To 300ml milk, add 2 tbsp plain flour and whisk until smooth.
Add 2 tbsp butter/marg and bring to the boil.
Simmer for 2 minutes, stirring often.
Add 1 tsp mustard and 75g of grated cheese. Stir so all cheese and mustard is mixed in.

Hope that's OK. Feel free to substitute broccoli for cauliflower or spinach and the fish for tuna or ham/bacon.
