Potato bake recipe please

Fed up with having mash or Jacket potato. Any ideas what else I can do with sausages tonight? Ideally like some sort of bake so that it will be ready for everyone whatever time they get home.
Have slow cooker so ideas for this as well would be great.

Boulangere? layers of sliced potato and fried onion. Plenty of seasoning and then half fill dish with stock...few flecks ofbutter and some dried herbs over the top are nice. Slice some potatos into circles keeping skins on (healthier and quicker!)
Arrange on the bottom of a cass dish.
Slice an onion - chuck on top.
Spoon over half a standard size tin of baked beans.
Another layer of potato circles
Another layer of onion
Another layer of beans
LAst layer of potatos
CAn add layer of sliced tomato to top now to stop potato crisping too much or cover with foil.
Bake in oven 200c for 45 - 50 mins Never tried it in SC but im sure it would work.
If you dont like onion leave them out!
Can also use up left over veg in a layer as well.

Can add a few dots of butter to top if u want but i dont bother less fat that way. No stock is needed the potato cooks in the baked bean juice. Iv put grated cheese on the top for the last 15 mins of cooking and it is lovely. As it has protien in it from the beans you can serve it on its own with lots of veg ot use it to go with some meat
Its a very versatile receipe - this is just the basic one you can experiment and add extra layers eg chopped bacon layer ,corned beef layer, left over veg layer

And the name of the dish "boulangere" itself comes from its humble origins. I wondered why it was the French word for baker, when it doesn't contain bread. Evidently, if you were so poor that all you had to eat were potatoes and onions, and no fuel to cook them with, you gave it to the village baker to cook it slowly in his cooling oven after the day's bread had been made.The acquisition of wealth is no longer the driving force in my life.0
