    cottage cheese, mince, onions with spices or curry, baked in oven with cheese on top! sounds horrible but lush

    You can use it in lasagne, just use cottage cheese instead of the white sauce.

    Fry half an onion, add half tin tomatoes, put 3oz pasta shells on to cook and when cooked drain and stir in the tomato and onion, then stir in 2 heaped dessertsps cottage cheese. This made loads for me but it was so yummy I managed to eat it! I don't normally like cottage cheese much.

    9 tubs is one heck of a lot! I would be tempted to make a variety of recipes and stick everything in the freezer for a later date, starting with a big Spanakopita using the cottage cheese instead of feta. At least you'll get your greens :rotfl::rotfl::rotfl:

    My son makes lots of smoothies and he always adds cottage cheese. You couldn't pay me to eat cottage cheese yet I will happily drink it in a smoothie.

    Im so jealous! I loooooove cottage cheese :D I used to mix it with fruit and yogurt for breakfast.

    Cottage Cheese Pancakes
    1 cup flour
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    2 tablespoons sugar
    4 eggs
    1 cup cottage cheese
    1/2 cup milk
    2 tablespoons canola oil


    In a large bowl, stir together flour, baking soda, salt and sugar. In a separate bowl, whisk together eggs, cottage cheese, milk and oil. Add flour mixture to egg mixture and whisk until completely blended.

    Grease a large frying pan, heat over medium heat. Working in batches, form each pancake by spooning about 1/4 cup of the batter onto the skillet. Cook, flipping pancakes once, until golden brown on both sides and cooked through.

    These make light "fresh" tasting pancakes. They are really good with a little bit of jam or syrup.

    I use it for going with cake like pouring cream. It has an element of salty/sourness to it but I think this really complements sweet cake. X

    I have a nice low fat cheesecake recipe I used to make quite often, that uses cottage cheese.

    Base: 100g digestive biscuits crushed into crumbs
    25g/1oz butter
    1 heaped tbsp honey


    Filling:

    450g/1lb cottage cheese
    75g/3oz sugar
    2 eggs
    grated rind and juice of 1 lemon (I used to always use two lemons)

    150ml / 1/4 pt low fat plain yoghurt
    1tbsp cornflour
    100g/4oz sultanas (optional)


    To make base, melt butter and honey and stir in biscuir crumbs. Press into base of an 8inch springform or cheesecake tin.

    To make filling, blend all ingredients (except sultanas) in a blender or food processor until smooth. Stir in sultanas and pour in tin.

    Bake at 180c/gas4 for 45 minutes. Turn off the oven and slightly open the door. Leave the cheesecake to cool in the oven until it reaches room temperature then refrigerate.
