Hi,
My MIL used to make super cheesecakes using cottage cheese, can't get hold of her recipe, but found US and UK links for lemon cheesecake recipes:

How about using it to make a flan/quiche? I used to have a recipe for a spinach and cottage cheese flan somewhere but I can't seem to find it at the moment. Will come back to you if I do, or if not I'll have a look on google
Oh, just another thought - I often make pasta and crumble feta cheese over it which, if you drained the cottage cheese through a muslin square or sieve would have a similar consistency, so that would probably work too!"An Ye Harm None, Do What Ye Will"

nice mixed with chives, parsley, crushed garlic & salt & pepper, served with pickled beetroot & crusty bread
or, mix it with eggs, chives if you have them, a little grated cheddar & enough milk to make a sloppy consistency, season well & layer in an oven-proof dish with sliced cooked potatoes, top with more cheddar. bake in a moderate oven for 35-45 minutes till heated through & bubbly on top. nice with crusty bread & salad. very nutritious too, loads of protein. & it uses up left-over boiled potatoes0 -

I don't have an actual suggestions but I LOVE LOVE LOVE cottage cheese!! I have it in jacket spuds mostly, I used to have it when I was little when we went to Tescos for luch (in the cafe) they always put a bit of parsley on the top, hee hee. I think I will try some of these suggestions too, thanks!0
