Chocolate Cottage Cheese
Cocoa powder and honey brighten cottage cheese and turn it into an indulgent, chocolaty dessert. A 2-tablespoon scoop of unsweetened cocoa powder has only 24 calories, and 1 tablespoon of honey has 64 calories. Blended with cottage cheese, they’ll create a decadent flavor similar to chocolate cheesecake. Small-curd cottage cheese works best, but if you prefer large curd, it will still be tasty. If you’d rather skip the 64 calories of honey, a tablespoon of cocoa powder will give cottage cheese a bitter, dark chocolate flavor.
Stuffed Cantaloupe
The flavors of cottage cheese and cantaloupe blend well, creating a mild and sweet dessert. Half of a medium cantaloupe has about 94 calories and enough bulk to fill you up for hours. It doesn’t take long to scoop out the seeds of the cantaloupe and fill the hole with cottage cheese. Large or small curd is fine for this treat. Either eat the stuffed cantaloupe as is or sprinkle some ground cinnamon over the top for an added boost of sweetness. If you have a bit more time available, ball or cube the cantaloupe and toss it with the cottage cheese in the fruit’s rind.
Fruit Salad
Chopped fruit sweetens cottage cheese and creates a refreshing dessert without added sugar. Strawberries with 50 calories per cup and a small apple with 77 calories will enliven the cottage cheese. Alternately, use peaches, pears, raspberries, mangoes, cherries or any of your favorite fruits. Toss the fruit with the cottage cheese at least five minutes before you plan to eat it. This lets the natural sugars blend with the cottage cheese to mask its bitterness. Either small- or large-curd cottage cheese is tasty with chopped fruit.
Vanilla Pudding
Cottage cheese can have a smooth, pudding-like consistency if you puree it in a blender or food processor. Small- or large-curd cottage cheese will adopt a creamy texture. Spoon the cottage cheese pudding into a bowl and drizzle vanilla extract over the top. Vanilla extract has only 12 calories per teaspoon, which is plenty for 4 ounces of cottage cheese. It mixes in easily and gives your cottage cheese pudding an indulgent flavor. Top the pudding with a 0.25-ounce serving of slivered almonds for added complexity and just 41 calories.0 -
