I haven't tried this particular recipe but I've frozen cottage cheese-based lasagne before and it was fine. I really hope you enjoy it now I've been so enthusiastic!Back after a very long break!0

I do a recipie that is really similar to this but you press the cottage cheese through a sieve to make a smooth texture, it only takes a couple of mins to do and the texture at the end is more like cream cheese, if there is a lot of liquid in the cottage cheese I would drain it off before doing this as it may be too runny.
I also do this with cottage cheese to make dip with a lot lower in fat than using cream cheese as the base of a dip and just as nice when you add the rest of your ingredients:)1 Sealed Pot Challenge # 1480

Seems to me that the cottage cheese will definitely change its texture and become firmer as another poster said.
In that case you could substitute chopped up mozzarella to get the same texture, and perhaps mix a bit of ricotta or quark to get that tangy flavour?
As for freezing, yes it should fine.:)Stone walls do not a prison make, nor iron bars a cage.0 -
I used the cottage cheese (at about 80p for 600g it would have been much more expensive to use anything else

Have just got a super bargain - 2kg tub of cottage cheese for £1 :money:.
I bought it to give to my dogs as a treat but was wondering what I could actually make with it. I'm not a great fan of cottage cheese as it is - but this is a good make and is quite nice.
Any ideas, please, sweet or savory. Nothing too fancy as I'm a bit of a lazy cook.

Try this ...
COTTAGE CHEESE & PRAWNS
Enough for a large pack of crisps or tortilla chips
INGREDIENTS
250g (1 medium tub) of cottage cheese
125g of fresh or frozen cooked prawns
1 tablespoon of tomato ketchup
1 teaspoon of paprika
DEFROSTING
If you are using frozen prawns, make sure that they are completely defrosted before use, according to the instructions on the packet. If you are in a hurry, put them in a sieve or colander and run them under cold water until they are floppy.
METHOD
Remove any excess water from the prawns with some kitchen paper.
Put the cottage cheese, prawns and ketchup into a bowl. Mix thoroughly.
Sprinkle on the paprika.
ADDITIONS & ALTERNATIVES
Add some finely chopped chives or garlic. Use cottage cheese with chives or garlic.
Serve as a dip or as a filling for a baked potato.
This could even make a light meal on its own with some salad.If you fold it in half, will an Audi A4 fit in a Citroen C5?

PASTA & COTTAGE CHEESE FLAN
Makes approx. 750ml
INGREDIENTS
1 packet of pasta in sauce
300ml of water
125ml or 150ml of milk
15g of butter or margarine
1 egg
200g tub of cottage cheese
METHOD
Make up the pasta in sauce with the water, milk and butter or margarine, and cook according to the instructions on the packet.
Put the pasta in sauce into a flat ovenproof dish. Level off the surface. Leave to cool until the sauce has thickened.
While it is cooling, break the egg into a bowl, pick out any bits of shell and beat the egg. Add the cottage cheese. Mix together thoroughly.
Put the egg and cottage cheese mixture on top. Spread to cover the pasta.
Cook in a preheated oven at 180°C, 350°F, gas mark 4 for 20 to 30 minutes until golden on top.
ADDITIONS & ALTERNATIVES
If you substitute the milk with an equal quantity of water and omit the butter or margarine, this is evidently "Slimming World sin free".
Use ‘quark’ instead of the cottage cheese.
Add ¼ of a teaspoon of mixed herbs to the pasta in sauce. Add ¼ of a teaspoon of ground black pepper to the egg mixture.
Put a sliced tomato on top.
TIPS
Use fresh eggs at room temperature. There is no need to keep eggs in the fridge. Keep them in a cardboard egg box in a cool cupboard.If you fold it in half, will an Audi A4 fit in a Citroen C5?
