I second the recommendation of mackeral pate. Also I've used cottage cheese mixed with wilted spinach as a filling for canneloni, which I then top with a tomato sauce and some grated cheese and bake in the oven.

I actually like to use cottage cheese instead of ricotta cheese when making lasagna. It's better for you and I personally think it tastes better in lasagna. cottage cheese please. I thought about stuffing cannaloni tubes with it and then making a tomato sauce.
Also can you freeze french toast (eggy bread)? I am wondering if anyone does this and how it is when it is reheated?
I have eggs and bread to use so I thought cobining them might be an idea.

If you've got eggs and bread to use, what about making a bread pudding - butter the bread and layer in in an oven proof dish with raisins/sultanas and sugar and then beat up a couple of eggs and add some milk and pour that over the bread/sugar/raisin mix, cook it off and then freeze it.
I'm sure you'll find a better recipe than mine somewhere.

Definitely need to cook the cottage cheese in a cheesecake before it is frozen, but I haven't got a recipe, sorry.
Actually, I've found one in a Mary Norwak cookbook, and although I've never made it, she's never failed me yet.
2oz digestive biscuits
Blend into crumbs and line a greased, lined 8" tin with a removable base
1lb cottage cheese
1 teaspoon lemon juice
1 teaspoon grated orange rind
1 tablespoon cornflour
2 eggs
2 tablespoons double cream
4oz caster sugar
Put everything except the egg whites and sugar into a bowl and blend until smooth
Whip egg whites until stiff in another bowl and beat in half sugar. Fold in the rest
Combine everything and spread on top of biscuit base
Bake at Gas 4 160 C fan for 1 hr
Leave in oven until cold
Remove from tin and top with tinned or fresh fruit

I've a friend who sometimes passes on to me over-ordered stock. I have 9 tubs of cottage cheese in my fridge. No one in my family is that keen on it as is. I use cottage cheese to make a crustless quiche.
Mix a pot of cottage cheese with 6 eggs, salt and pepper to taste and any other ingredients you want to throw in then bake until firm and set. I sometimes grate a little extra cheese on top to give it a bit of extra cheesiness and sometimes herbs depending on the other ingredients I've used.
Fillings I use are;
tuna, sweetcorn, red onion.
salmon and brocolli
bacon lardons, mushrooms and sliced tomatoes.
corned beef and onion
