    Fried Rice

    Prawns (Don’t pre cook as prawns if pink are already cooked, if grey they need to be cooked until they turn pink)

    Bacon & or Ham
    Onions finely chopped
    Peas (Frozen peas are the best)
    Mushrooms
    Peppers
    Soy Sauce
    Seasonings
    Eggs 1x Omelette 1x beaten egg
    Rice (cooked)
    Butter

    Fried Rice takes longer to prepare than to cook the dish.You can use any or all of the above. You can make this dish an all in one meal or serve with chops, chicken, gammon etc.

    Pre cook the rice, (rice is always better used reheated especially in this sort of dish, can be cooked the day before, but cooked rice must be refrigerated as soon as it is cooled to avoid bacteria!). Before use fluff up with a fork, plain rice or fried rice is ideal to freeze & re-heats well in a microwave, wok or pan. I always make more than I need so I have some to freeze for a quick meal.

    Decide which ingredients you are to use, dice into small pieces.

    Pre cook any items that need to be cooked, keep them warm.

    Heat the peas through, drain when ready to use.

    Make an Omelette and dice.

    When ready to make the fried rice, heat some butter in a Wok or large pan, add beaten egg and stir until slightly scrambled but still quite wet, stir in about half of the rice and quickly mix to allow the egg to coat the rice then add the remaining rice and stir well, you will need to add some butter to the pan, add as necessary to allow ingredients not to dry out or burn. (Or reheat the rice, pour beaten egg over it and leave for a minute or so,before stirring in to the rice. Both methods work well).

    Add all the other ingredients to the pan, add any seasonings, soy sauce (basically any thing you feel will enhance the dish, you can change seasonings to suit your tastes).

    Stir over a hot heat until all the ingredients are thoroughly heated. (If you add more butter to the dish it will help to make the rice crispier).

    As with all cooking adapt and season to your taste.

    Serve on its own, or with another meat.

    You can also do just a Mushroom Fried Rice, use beaten egg, rice & cooked mushrooms. Cook egg as above, add rice & mushrooms add more butter until heated thoroughly. Season to taste.

    (Use butter for cooking, but you do not want the dish to be greasy)

    Hey folks :)

    Cooked up a joint of ham the other day and struggling a bit to think of meal ideas for what remains.

    Done some burritos with some in (tasty), the traditional lentil soup and ham, egg and chips.

    Any clever thoughts?

    I like it with cheese sauce and pasta. Also ham and egg quiche, you can stretch it out over loads of meals.

    Risotto or pasta sauce, also where I used to work we did a dish that was a creamy mushroom sauce (lots of mushrooms to sauce) topped with a slice of ham and then gruyere cheese sprinkled over top and baked served with crusty bread for dipping.

    Freeze it in user-portions - slices for butties, chunks for pies, scraps for pasta sauces.

    Quick pea and ham soup
    some chunks of ham + a tin of processed or mushy peas + seasoning and a little stock or water if needed.
    add it all together and warm up!

    Only 3 ways to eat ham

    1 inside some pastry with mushrooms (pie)
    2 between two pieces of bread with mustard (sandwich)
    3 on a plate with egg and chips (food)

    Forget all these risotto /pasta/ cream sauce inventions ( and !!!!!! is guyere cheese ???). Theyre not why ham was invented!!!
