Hi soph,
I would cut it into a couple of smaller joints and freeze. When you want to cook one, boil it, then finish it off in the oven. Once it's been cooked the leftover gammon is fine to freeze a second time.

My favourite is cheesy pasta and bacon with onions, Parmesan,peppers, garlic etc....

Omlettes; carbonara ; sliced in sandwiches; gammon, egg n chips; gammon curry; gammon enchiladas; gammon cold cuts with jacket potato and beans; gammon mixed with may and used as a jacket/sandwich filling with a green salad on the side; fried gammon sandwiches.
Freeze it (sliced or whole) and have it as a roast another day with roast potatoes/yorkies/veg/gravy. (Most cost effective because a roast is a more "substantial" meal than bitsof; especially as you have a half of it!)
Gammon/apple/onion/potato pie (cubed gammon, cubed apple, diced onion, mashed potato all mixed together then baked in the oven, until golden and crispy on the top).
Add cubed gammon to peppercorn sauce, top with mash, bake.
Gammon "toad-in-the-hole" (replace sausages with chucks of gammon).
Gammon salad (think ham salad)
Gammon quesadillas
Gammon pancakes (layer pancakes, white sauce with chopped gammon added, and make up like a lasagne)
Gammon lasagne (use gammon in white sauce and layer as above)
Gammon fritters (dip slices in batter and fry until golden - like spam fritters)
Gammon cutlets (mix chopped gammon with mash, coat in egg then breadcrumbs and fry until golden)
