I ended up making a bit of a hybrid recipe, which was close to the chickpea casserole, and sort of a curry.
1/2 an aubergine (my aubergine was huge, and there is only one of me)
a tin of chick peas
five smallish tomatoes, quartered
some tomato puree
stock (made with a knorr stock cube)
cumin, corriander, curry powder
some coconut powder (about 2 pounds for a box in Tesco - it lasts for ages, and is much cheaper than tinned coconut milk as it lasts for longer)
a chopped onion
Chopped aubergine, tomatoes, onions all fried together with olive oil
Add stock, chickpeas, tomato puree and spices and coconut powder
Simmer for ten mins.

slice it then grill/fry each slice, when nearly done add some mozzarella on top and put back under the grill again lovely! you can add garlic or herbs too, yumm!Member 1145 Sealed Pot Challenge No4

I had it battered & deep fried in Greece - my god it was amazng ( not v low fat tho!:beer: Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.

Brought an aubergine this week from Lidl as they were on offer, but dont have a clue what to do with it.
Anyone got any exciting recipes / ideas?

Roasted in olive oil in a hot oven - Cube the aubergine I add courgette, red onion & peppers toss in the oil & salt & pepper & put in the oven til cooked can be used on their own as veg or added to pasta sauce yummy. They can also be char grilled/george forman grilled. They are lovely lightly oiled in thick slices rubbed with garlic & bunged on the barbie. Delia Smith has a lovely recipe for aubergine with mozarella & basil, think its on her website (could be wrong on that one but I have seen it somewhere) The bbc recipe pages are great for finding recipes all you have to do is type in your ingredients & it will bring up loads of recipes.

I only ever have aubergine in Ratatouille. We make it with aubergine, courgette, tin of tomatoes and anything else we fancy (often peppers). Dice the aubergine very small (I'm not keen on the taste otherwise) and fry in olive oil. Do the same with the other veggies. Fry some onions and garlic too. Bung all of it in a casserole dish and cook at 180 for 1hr. Grate some cheese and add it in the last 15 mins. Serve with crusty bread and red wine (!).

Chop it into cubes, along with chopped red pepper, onions, mushrooms, courgettes. Put into an ovenproof dish, sprinkle with olive oil and cook in a hot oven for about 25 minutes until vegetables are turning brown at the edges. Serve on rice with a lemon sauce, made with the juice of half a lemon put into some chicken stock made with a stock cube, thickened with a little cornflour.0
