Slice 1 cm thick slices, fry them then put on absorbent paper to get rid of extra oil - make a few layers using fried slices covered with tomato sauce (like a pasta sauce, made with onion tomatoes and basil) and sprinkle grated parmesan on each layer. Bake in hot oven for 20 minutes or until crisp on top (grated parmesan on top as well!)
Voila, melanzane alla parmigiana (aubergine parmigiana) a true delicacy!

I have just put together an aubergine bake (Delias Frugal cook book), consisting of aubergine (:eek: ), tomatoes, onion, garlic, all spice, sugar and parsley - topped it off with breadcrumbs and cheese.
It has made up far more than I was expecting it to so have made 2 - do you think it is ok to freeze it?
If so, should I freeze it before it goes in the oven or cook it first?

Ah, I didnt have enough to freeze anyway! Never mind. For future reference does anyone know if I could have?
And also-has anyone tried the Asda frozen grilled aubergine-was just looking and its £2 for 500g, so can't work out if its cheaper than doing it myself (prob would be when take into account electricity to grill the things) How much does an average aubergine weigh? I used 2-and that was enough for 1 moussaka for 4(normal people sized) portions. Does anyone know how many whole aubergines the bag is the equivalent of? Thanks0 -
My husband went shopping for me today as I was busy cooking, and despit being given a very precise list, came home with an Aubergine from Aldi because he thought they were 29p too (yes he can read!). I DO NOT LIKE AUBERGINE. As I am the cook, an it cost 89P I do not want to waste it, please please please give me an idea of what to do with it. I've just cooked a mountain of chickpeas, do you think that would make a decent curry, and disguise the flavour any? Any tried and tested recipes out there which are simple to make with a basic storecupboard.
PS we won't mention the four small bananas I requested which turned up as six huge organic ones costing £1.89!!!!!!!

i cut up an aubergine and put it in a chilli and the other half in a curry....didnt notice it as it was cut in to really small bits...i should think it would be nice with the chick peas in a curryonwards and upwards0
