Yikes, have got an Aubergine in my organic box this week!
Have previously said no to Aubergine as i don't know what to do with it, thought I had some recipes for it but now I can't find any! Have looked at recipes and mega thread, also done a search for "aubergine"... Nothing!!
So if anyone can help, please do... I am sure you can do something with it where by you end up with like aubergine mince, does anyone know what I am talking about? only one medium ish aubergine to use.

Cut it into large chunks (cube shaped) and roast with a load of other veg (onions, garlic, courgettes, tomatoes, mushrooms & some herbs eg rosemary ) then serve with chunky bread or pasta.
This is yummy and we eat this a lot. You can then use any left-over veg the next day, just re-heat it and put it in a pitta bread.0 -

Slice longways and roll around a spoonful of the follwoing mixture :
Anchovies
Cooked rice
Chopped sun dried tomatoes
Capers
Cubed mozerella
Brush well with oil & bake for 25 mins at 200 degrees and serve on own as a started or with veg & harb bread as a main.
Not the cheapest of recipies but fab for dinner parties etc:D

Or slice lengthways into thin strips and brush with olive oil and place on griddle along with some slices of haloumi cheese. When cooked make a sandwich with two slices of aubergine and a slice of cheese between"An Ye Harm None, Do What Ye Will"

Slice 1 cm thick slices, fry them then put on absorbent paper to get rid of extra oil - make a few layers using fried slices covered with tomato sauce (like a pasta sauce, made with onion tomatoes and basil) and sprinkle grated parmesan on each layer. Bake in hot oven for 20 minutes or until crisp on top (grated parmesan on top as well!)
Voila, melanzane alla parmigiana (aubergine parmigiana) a true delicacy!

We've got an aubergine plant that I bought at a village show. It's had a flower on it but no sign of aubergine. Will it produce one this year or when?

I had aubergine for dinner tonight. I usually roast it with some corgette, onion and red pepper, sprinkle some mixed herbs on top and drizzle over some oil. Yum. Eat with pasta, bread or even rice. Chesse on top is yummy.
Any left overs could be used cold in a sandwich with humous. Yum.
I also chop up and saute with other veg, add a tin of tomatoes for a lovely ratatouille (spelling???). Freezes well and can be added to - some crispy bacon is always nice.
Alternatively, they can be stuffed although I have never done this. Also, if you roast it whole, you can scoop out the soft insides and use as a dip. I think that's a Jamie Oliver thing!
