    no peeling and really yummy-aubergine curry with potatoes is heavanly.As is stuffed aubergine with mince-keep it slightly hot with a dash of chilli for an even better taste

  • Hi, I have two aubergines in my veggie box this week and don't know how to use them, any nice recipes please.
  • Cut into small dice and fry in olive oil. Add tin of creamed tomatoes (or buy value whole plum tomatoes and blend, to be truly OS!), some basil & garlic and cook until sauce reduces a little (should not be watery). Stir through pasta and sprinkle with parmesan.
    Made this for my baby the other day - he loved it, but stank of garlic afterwards!

    Moussaka? Make a bolognaise-type sauce and add a touch of cinnamon to the mince. Fry slices of aubergine in Olive oil until browned, lay on top of the mince in a baking dish, top with white sauce and bake.

    Stuffed aubergines are nice too and also they're great in curries. DON'T let them come in contact with water though. Their structure means they will absorb all the water and come out tasteless and mushy. HTH

    I made an aubergine layer in my slow cooker last week.

    tip - Aubergine can be bitter so slice it and sprinkled with salt and leave for at least 30 minutes. Wash off the salt before cooking

    Place bolognese sauce in bottom of slow cooker.
    slice aubegine lengthwise - salt, leave and then wash
    Fry aubegine in olive oil to soften.
    Place layers of aubergine over bolognese
    Add layer of aubergine
    Add bolognese.
    Top with carton of chopped tomatoes and cook on low for 6 hours.

    Alternatively make a aubergine, courgette, peppers and tomato stew. This time slice the aubegine horizontally before salting. Fry onion until soften then place in large saucepan or slow cooker. Fry the rest of the vegetables seperately. Season. Finally add tin of choped tomotoes and leave to simmer.

    found this in MALANI'S KITCHEN BUT SLIGHTLY MODIFIED

    ingredients
    1lb aubergines
    1/2 lb small red onions or pearl onions
    1/4 small dried prawns (shrimp)
    1/4 lb small green chillies cut in the middle(HOT!!!)
    10 cloves of finely chopped (paste)garlic
    2 table spoon of crushed dried red chillies
    1/3 cup of coconut vinegar
    3 tsp pf finely powdered black mustard seed
    5 full tsp of sugar
    2 cloves (chopped)
    2 cardamoms(chopped)
    Salt to taste
    coconut or veg oil to deep fry

    Method
    Cut aubergines into thin slices and deep fry, drain and keep aside. fry small onions for about 2mnts and then fry green chillies for about 30 seconds drain and keep aside. Fry fried shrimps for 45 seconds. Then saute crushed red chillies for 15 sedconds. drain, keep all fried stuff aside. Mix garlic mustard,cardamom,cloves and sugar to gether with vinegar boil for 1 and 1/2 minute. take from fire and put all fried stuff. Add salt to taste. Mix well.Keep till cool. This taste better after one day.

    Not much need to salt aubergines, they have been bred to be less bitter than when we first had them available to us.

    For a slightly lower calorie alternative you can dice, toss in olive oil and roast. Nice on pizza with mozzarella or with balsamic vinegar as a salad. Or you can slice and brush with oil and roast, then use this as the basis for a salad. Aubergine parmigiana is also lovely (though fugeddabouit if you're on a diet).

    Hi,
    instead of frying aubergines slices (for moussaka or parmigiana) you can grill them or cook them in the oven over a sheet of baking paper.
    Then layer with tomatoes and mozzarella (for parmigiana) or bolognese sauce and white sauce (for moussaka) and bake as usual.
    They have a lot less calories and you don't notice difference in the taste.
