    I always eat them raw choped into little cubes in a salad they suck up all the oil and lemon dressing really nice, my father in law has a greek restaraunt and always puts them in his salads!
    People who live in glass houses shouldnt throw stones...

    It is much easier to see other people's failings than our own.

    Do a Jamie Oliver on it, wrap it in tin foil and put in the oven on Reg 6 for about an hour, when it comes out it will be all soft and squishy, and can be eaten like that like a dip or mixed in to any meal. My DD 3 year old would eat nothing else if given the chance

    Absolutely. I havent made them yet but the following recipe in my weight watchers cookbook (for any interested it has apoints value of 0 which means very little fat).

    2 large aubergines, sliced in half widthways and then into 5mm slices on the diagonal to give you long semi-circles.
    low fat cooking spray
    salt and pepper

    Lay the aubergine slices on the grill pan, spray with cooking spray (or brush with oil I would guess if you didnt have spray??) and then season liberally. Grill until golden and then turn slices over. Spray and season again and grill for further 2-4 mintues until dried out and golden brown. Serve warm.

    your plan sounds good, i fry some onion and garlic in plenty of olive oil, cut aubergine in half length ways and score inside so that oil can get down into it, put in oven proof dish pour over onion etc then i top with a tomato sauce either home made or jar then top with some grated cheese and bake in the oven for about 20 mins yum yum!

    1 aubergine
    1 medium onion, chopped
    2-3 garlic cloves
    2tbsp tahini or 1 tbsp sesame oil
    2tbsp olive oil
    2tbsp lemon juice (1/2 lemon)
    salt & pepper, to taste

    Cook the aubergine over the gas ring on low, or grill on the bbq for 25-30 minutes, until it's blackened all over. Pleace in a small baking dish and bake in a hot oven for 15-20 minutes until soft but not mushy. In a food processor, puree the onion and garlic until smooth. When the aubergine is cool enough to handle, peel it, and add to the processor with the tahini/sesame oil, olive oil & lemon juice. Puree until smooth, season to taste. Serve chilled or at room temperature, with crudites.

    I've read through all the old threads and have lots of yummy recipe ideas, thanks! But still unsure as to whether or not I have to peel this funny looking thing?
