I chop aubergine, onions, garlic, peppers and courgettes, combine in a dish with herbs de provence and passata. I use a square pyrex which is quite big. Lay over chicken breasts or pork steaks/ chops and cover with foil. Lift off foil after about half an hour for the meat to brown.

moussaka, aubergine ( i grill it in thin slices) mince (with a pinch of cinnamon for authenticity) tinned toms/passata, veggies, cooked sliced potatos, white sauce, layer up, i start mince potato, aubergine, sauce, repeat, finishing with sauce and i like to add cheese on the top. bake for 35-45 mins and serve with crusty bread
poor mans cavier (roast in the skin and then scrape out and mix with creme fraiche)
veggie curry
pasta bake

Poohzee, How unfair of you to post this idea. I'm doing weight watchers and have an aubergine lurking in the back of the fridge and was planning on doing something healthy with it! Now your idea sounds so delish I'm going to have to try it and blow my diet with lovely cheese and yummy pesto!! :j Shame on you for ruining my diet with your good ideas!!! :rotfl:

The Imam fainted is my favourite meal.
I'm not sure what the rules here re links are but googling under either 'The imam fainted' or Imam biyildi will get you a better written recipe than I would rush type out.

What a fabulous name for a dish. I have never heard of it before.
I've had a quick "google" and ...
This dish, Imam Bayildi, literally means, "The Imam Fainted". As the legend goes, an Imam (a Muslim religious leader), after observing a holy day and ending a long fast, was so taken with the delicious aroma of this dish, he fainted. The dish was named in his honour.The acquisition of wealth is no longer the driving force in my life.0 -
you've probably already eaten that aubergine, but here's something to consider the next time you buy another aubergine! :-) its a Japanese dish called Nasu Dengaku. Its heavenly and oh so quick to make
you will need some white miso paste for this, and mirin (dry vermouth or white wine as a substitue) for the sauce.
In a small saucepan add 2 tablespoons of mirin, bring to boil and let alcohol evaporate for abt a min. mix in 1 tablespoon of white miso, add 1 or less tablespoon of sugar to taste, disolve sugar, and leave aside to use. try not to boil the mix once the miso is added as that destroys the nutrients in the miso.
slice the aubergine into 1 inch thick slices (either lengthwise or into round discs, up to you)
spray or brush on some oil (sesame oil, veg oil or olive oil whichever you like) and grill till soft on both sides
spread on a thin layer of the prepared miso sauce onto 1 side of the grilled aubergine slices and grill till it bubbles, usually takes under a minute, be care not to burn it.
sprinkle on some toasted sesame seeds and chopped spring onions and its ready

Ahh, how familiar - just came off ww last week and have already had the aubergine once!! hope you enjoy and get straight back onto the plan!:o0
