    I did a really nice lamb and aubergine curry the other day..

    Ingredients: couple onions, chopped / pepper (red or green), chopped / courgette, chopped / aubergine, chopped into cubes about 1 cm across / couple cloves garlic, minced / minced lamb / sultanas / mushrooms, chopped / otherveg to suit you, e.g. leek, sweetcorn, peas / curry powder - i use a madras one / seasoning / boullion / oxo stock cube / tsp sugar / enough oil to cover base of pan, no more

    - this serves 4, you may want to use half an aubergine and courgette.

    1) saute onions in the oil till translucent and add the minced lamb. fry till all browned off. Add peppers and garlic, cook 5 minutes, then add courgette and aubergine. cook with the lid on till the courgette and aubergine have lost their springiness - about 5 minutes.

    2) add mushrooms and any other veg, and the sultanas. again, cook 5 minutes.

    3) add the curry powder, boullion, oxo cube, seasoning and sugar. Stir well and leave to cook. It doesn't need any extra water - there'll be enough water coming out of the veg to deal with that. give it 10 minutes on a low simmer, without a lid, stirring frequently. taste for seasoning.

    4) cook for about 15-20 minutes, stirring frequently, and when the amount of liquid looks about right, put the lid on. if you get really worried, turn the ring out - it should keep the heat ok while you cook the rice. I try to give it about half an hour once all the ingredients are in, before i dish up.

    jami eoliver has a great pasta dish with aubergine - its yum!

    garlic and onion in oil
    add aubergine
    add tin toms
    a little double cream
    mix with fusilli or penne pasta
    add mozzerella

    yummy!!

    Ok, the search and index has beaten me - im looking for some good ideas for an aubergine i bought yesterday!
    Its never been a veg ive liked before, so really looking for some inspiration especially as i have very picky children!!!

    TOP MONEYSAVING TIP

    Make your own Pot Noodles using a flower pot, sawdust and some old shoe laces. Pour in boiling water, stir then allow to stand for two minutes before taking one mouthful, and throwing away. Just like the real thing!

    You can make a low fat humous.
    Just put 2 large tins of drained chick peas into a blender, season to taste.
    Meanwhile roast a whole aubergine in a little oil in a hot oven for 30mins. Halve it, scoop out the flesh & add to the chick peas & blend well :D
    Serve with chunks of crunchy carrots, celery & peppers.

    Asda currently have aubergines on offer 50p each ,usually around 98p. Just made the Anthony Worrell Thompson Moussaka from earlier in the post -well recommended ,it was delish !
