Thanks, squeaky. Don't know how I overlooked that one. I have the feeling that tomorrow I'll get all the stuff together and cook myself a wee little bread pudding...

*cries* i got my husband to pick some bread up on his way home. he doesn't like B&B pudding so I was gonna have some and leave the rest for breakfast
and he was just about to start eating bread and choc spread... when i noticed the bread was mouldy.
Oh well - have to make do with cherry crumble instead

I use wholemeal bread, butter and spread with honey, cut into triangles and layer with mixed fruit and sprinkle over a little cinnamon, two eggs, a slug of cream made up to half a pint with skimmed milk, for a biggar pudding 4 eggs, slug of cream and make up to a pint.
Pour the egg mixture over the bread and press down with the back of a fork, put in the fridge for about an hour.
Set the oven at reg 5 sprinkle the top of the pudding with demerara sugar, cook for about an hour, to test put a knife in the middle and wiggle, if you see the egg mixture coming up put back in the oven for another 10 - 15 minutes, the egg mixture should be quite set and the pudding will puff up, the sugar will be crunchy.
Allow to cool for a few minutes then serve with cream or custard.
I have in the past made it with stale teacake, just butter and spread with a little honey, you can if you wish put soem glace cherries in, the the egg mixture and cook as before. Panettone also makes superb bread and butter pudding........ a little brandy or whisky added to the milk makes a special pudding for a dinner party.........

i use cinnamon fruit loaf with philadelphia as the spread
cover with the usual egg custard mix
then make a sauce with lemon juice, water, sugar and southern comfort to pour on when serving
a bit extravagant but nice ( and naughty ) occasionally0 -
and to think that this was supposed to be a thrifty way of using up stale old bread....:rotfl:0

Bread and butter pudd should freeze perfectly well! After all-you can actualy buy it frozen. Make your full sized pud, and when cold, seal in a container and freeze it. Should be fine for up to 3 months-bet it will be used up by next week though, whichever recipe you use-which reminds me-I think theres a lots in my breadbin-so time for me to maake one for supper I think.
