Can also be done in the microwave if in a hurry...say about 5 mins high and 5 mins med high for 800watt micro. Don't overdo it tho, or the edges will go hard n rubbery..I cook in a pyrex glass dish and check underneath that the middle bit of egg is set, not still runny, you can test with a knife in the middle too.
I sprinkle brown sugar on the top so it doesn't look too anaemic. Also remember to add a teaspoon of Vanilla essence to the milk and egg before you pour over the bread, gives a lovely taste to the custard (egg/milk) bit.Bless Martin's Little Cotton Socks. I have just over half a cinnamon loaf to use up today. It was meant to be a fruity loaf but i forgot to set the "add extras" button on the BM
May go and soak some sultanas in a minute........
So much for not eating too much. This OS is not the way to a slim waistline0 -
Thought I would post my favourite dessert on here as it's v. cheap to make, a great way to get rid of leftovers and it's delicious
really sorry if someone else has already posted it - I'm still trying to work out how to use the search features but I'll get better at it! (bit technophobic).
Anyway - it's from the Dinner Lady cookbook (which is great imo!) and it involves:
1. Grease a deep dish.
2. Take 6 ounces of bread (about 5 slices) - butter them right to the edges, then cut them into triangles.
3. Layer the triangles in the dish, all crusts pointing to the bottom of the dish. On each layer sprinkle some caster sugar and sultanas (you should start with 4oz sultanas and 1.5oz sugar and use a little on each layer). Also sprinkle a little nutmeg on each layer.
4. Beat 3 eggs with 1 pint of milk (I use whole milk for this if I can) and then pour this mixture, through a sieve, onto the bread in the dish. Leave the whole thing to stand for 20-30 minutes. Meanwhile, preheat oven to 180 degrees c (gas mark 4).
5. Bake for about 25 minutes until the custardy part is set but wobbly and the pudding is beginning to brown. You might need to turn it down if it browns too fast (mine did at first, have a ferocious oven!).
6. Try to resist eating it all straight away!!
It's really nice warm and just comforting and winterymy friend makes it with choc chips but I haven't tried that yet.

I like to make a savoury bread & cheese pudding with left-over bread. The recipe is the same as bread & butter pudding, just leave out all the sweet things and add grated cheese, salt & pepper instead (I use cheddar and mozarella if I've got some left after making pizza). You can also add a splash of tabasco or worchester sauce for a bit of a kick. I like it for lunch and it also makes a lovely supper for cold nights.Dum Spiro Spero0
