I always egg--it helps with moisture and binding. However, when I'm out of eggs I'll sometimes substitute with a small drop or so of milk added to the bread crumbs. However, I tend to add minced onions, peppers and garlic which makes the extra binding necessary.0

I always add an egg cos that what my mum always did but have recently had friends say they never do and their stuff turns out fine, just add a decent amount of tomato paste apparently??? I think I personally will stick with adding an egg as I'd rather be confident the meal will turn out how I expect rather than a crumbly meatloaf!0

I don't egg burgers and prefer them unegged. I do sometimes egg meatloaf, dpending on how its compiled some times it needs and egg to hold together.0

I would only add an egg if the meat is so lean that it won't hold together on it's own. I always try to leave adulterating beefburgers (or meatloaf) with all sorts of God knows what to the professionals.The acquisition of wealth is no longer the driving force in my life.0

In the end I used 1/2 a beaten egg & they came out LUSH!! I got seven in total,scoffed two & wrapped the others & they're in the freezer.Only thing they need next time I make them is more onion & maybe a tad more pepper...
I didn't have any tomato puree so I added a splodge of Red Pesto (Asda Smart Price) which is good for sauces.0 -

Hi,
I made some homemade burgers last night with a mix of lamb mince, beef mince and an egg. How long will the remaining burger mix keep in the fridge? My main concern is that it has raw egg in it, but I would like to use the rest up tomorrow night.
