  • I've never put carrot in my burgers but do add a small handful of oats to my beef with a bit of salt and pepper. I never add an egg to bind,I just give the mix a good squish together, form and chill in the fridge for a bit before frying

    That may well make the difference.

    I make mine (usually about 6oz uncooked) with minced steak, a little minced onion and seasoning but I grill mine and serve them pink in the middle. That's probably why I didn't think carrot and oats would be successful.:)

    I don't mind using the eggs as i have free range girls who keeps me in plenty of eggs:A:j.

    I think quite a few people probably use some oats in their burgers. If you're worried about them looking too obvious and have one of those mini food processors, you could put the oats in that and grind them up a little more finely. they may make the mixture a little dryer so that it crumbles, but binding with an egg should solve the problem. The moisture from a finely chopped onion will also help to bind the mixture. Have never tried grated carrot but can't see why a small amount can't be added.

    My standard hm burger mix is as follows

    Mince
    huge handful of oats
    cup dried soya mince
    1 egg
    big squeeze ketchup
    oxo cube
    s+p

    Combine in a large bowl and leave for 10/15 mins for the soya mince to soak up the moisture. Shallow fry.

    (extras that I often add in are, worcestershire sauce, mushroom ketchup, soy sauce)

    I get lots of compliments about my burgers and even my DD who will never eat a 'normal' burger, will eat mine :)


    A danish meatball recipe is 50% beef mince, 50% pork mince, lots of oats, egg beaten with a little milk, salt and pepper. Absolutely scrummy and the oats, whilst not really detectable, add a certain something that normal burgers/meatballs do not have :)

    I just use mince and grated onion. I grate the onion rather than chop it as it I hate uncooked bits of onion and the grating produces a nice watery effect which seems to bind the burger well. a bit of seasoning, shape the burgers, chill for an hour or so, and either grill or fry them. mine dont fall apart and they are purely beef and a bit of onion.
  • Interesting thread. Last time I tried hm burgers I used a recipe with lamb mince. They were delicious BUT they had shrunk so much when they were cooked that they ended up looking like 10p pieces!! I ended up hungry because there wasnt really enough to go around.

    Its put me off making them again but I like the porridge oats idea.

    Last week saw some 'burger press' plastic things in Poundland, they looked pretty good and made me think of making my own.
    I don't normally eat burgers..................but I do so love a gadget!

    I have a lump of sausagemeat & another of mince,I have some breadcrumbs & onions to add & I am going to make burgers or meatloaf (have'nt decided),the question is should I add an egg to the mix or not?...
