I'd just use the mince that you always use and see how you fare. If you don't like them just smother in tomato sauce and salad!

Perhaps travel cannot prevent bigotry. But by demonstrating that all people cry, laugh, eat, worry and die, it introduces the idea that if we try to understand each other, we may even become friends.

    Hi gemmaj,

For burgers I use a higher fat (cheaper) mince than I would normally use in other meals as the fat helps the burgers to bind and much of it will drain off when they're cooking anyway.

As your thread has dropped down the board I'll add your thread to the one that was linked to earlier as your question may help others .

  • I put the minced beef into a large bowl and add in salt and pepper, worcester sauce (1tbsp), wholegrain mustard (1 tsp) and crushed garlic cloves (as many as you want!) mix it all up together and then form into burgers and cook under grill.

An egg helps to bind it if you need it to as well ;o)
Real men never follow instructions; after all they are just the manufacturer's opinion on how to put something together. :p

I put mince and finely chopped onion, salt and pepper, fresh breadcrumbs in the food processor and let it mix it then add slowly one beaten egg. Sometimes I add some chilli flakes. Freeze great and tast delish BBQ or grill.
Mama read so much about the dangers of drinking alcohol and eating chocolate that she immediately gave up reading.
  • the egg isn't necessary if you are using mustard as this helps bind everything together :)

I like to add some grated or finely chopped onion to the mince for burgers, along with salt and pepper. If it seems dry then a beaten egg.
About one small onion to a pound of mince, but it's all to taste.

If you'd like a properly measured recipe for the first time then this Rachel Allen on is a nice basic one

but I'm sure that once you get going you'll be making your own additions.

Home made burgers are the best!

My secret recipe is a bit like spendapennyortwo's - mince, worcester, garlic, pepper, but with herbs and half an oxo. Delish! We made them on camp with my Guides last year, and they couldn't belive how good they were! We're making them again when we go next weekend, so I guess they must've liked 'em!

I guess I should experiment with mustard etc, but old habits die hard!

You've made me feel hungry just thinking about them!

ETA - oh,and don't mix them too much, or you loose the texture and they end up and bit chewy and shop bought IYKWIM.

Basically the same as what I do,but I add cold chopped fried onions to the mix & often mould the burger mixture around a chunk of cheese or cooked black pudding,so you have a contrasting center.
But be warned, the cheese will be very hot!!
