  • I like veggie things. A really quick and filling thing is Grill one huge flat mushroom, gill side down, turn over. Slice some brie (or any other cheese) and cherry tomatoes. Place on the mushroom on top of the gills. Grill again till the cheese melts. If you want it even more filling serve on a piece of toast. Takes about five minutes and is gorgeous!

    Lentil and stuffing burgers.

    Boil lentils till soft, and prepare stuffing as per packet. Leave both to cool. create patty shapes and fry. yummy.

  • I'm new here and not sure if there's already a post like this, but I was just wondering if anyone could help us.

    We are a couple and were looking to make healthy vegetarian meals that are as cheap as possible.

    We have breakfast and dinner and a bigger tea.

    Any recipes would help and we appreciate it so much.
  • Hi, not a recipe as such, but my Cherub loves carrot soup for tea so I bung a load of chopped carrots, fried onion and some vegetable stock into the slow cooker. When it's done I blend it and grate cheese on the top. Quick, easy and healthy!
  • Also, we make a large pot of quorn bolognaise sauce: onion, stock, quorn mince, garlic, tomatoes (plus whatever veggies we've got to hand). We then freeze it in batches to have with spaghetti or add kidney beans and spices to turn into a chilli. Also nice on jackets.

    Here is an adaptation of a meal plan I have a go at for the feed two for £7. I've amended it to take out the fish.

    week one
    1 onion 21p
    3 carrots 24p
    500g split peas 49p
    pasta sauce 39p
    value spaghetti 49p
    2 tins beans 52p
    2 tins tomatoes 62p
    12 everyday rolls 35p
    2 pints milk 89p (water down if necessary)
    400 grams Chick peas 69p
    stork 69p (must last 3 weeks, ouch!)
    veg stock cubes 10p
    kilo mixed veg 75p
    cornflakes 31p

    17p over

    meals

    breakfast: cornflakes and milk
    Dinner: split pea soup, with some veg and with a roll
    veg soup (use half of bag + half onion + two carrots with a tin of beans, with a roll

    Tea: pasta with chick peas and pasta sauce
    pasta with split peas, tomatoes and remaining veg.
    beans on toast

    Week two
    2 carrots 16p
    3 tins kidney beans (some for next week) 36p
    value gravy granules 20p (they are meat free, I've checked!)
    4 tins mushy peas (16p)

    Tea: shepherds pie with potatoes, split peas, veg, gravy granules
    Chilli with split peas, tin of toms, carrot, curry powder, kidney beans from last week, some oats to stretch it, and rice
    sardine pasta, with tin of toms, tuna, pasta sauce
    beans on toast


    It's not the most inspiring menu, but it might give you a start. I've avoided quorn because I've gone for the cheapest possible option.

    Other recipes I like are:
    bean and tomato soup, blend a tin of toms and tin of beans, add seasoning and heat through!
    chick pea curry, chick peas, curry powder and spices available, stock cube, and any veg you have, with rice.
    cheese bake, alternate cheese onions and slices of potatoes and bake.

    I'm sure you'll get lots of ideas from other MSErs, I've learnt loads from this site.

    Dahl and rice is very cheap. Buying big packs of rice and lentils works out to be much cheaper than buying small packets.

    My contribution is going to sound really extravagant after some of the others!

    We like noodles cooked in half a can of coconut milk (2 for £1 at Mr T) topped up to a pint with stock. Fry an onion with a spoonful of curry paste, pour on the liquid, bring to boil, break about 200g of noodles into the liquid, cover and stir occasionally until all the liquid is absorbed.

    You can freeze the other half of the can in a sandwich box or bag for another time
    Make £25 a day in April £0/£750 (March £584, February £602, January £883.66)

    December £361.54, November £322.28, October £288.52, September £374.30, August £223.95, July £71.45, June £251.22, May£119.33, April £236.24, March £106.74, Feb £40.99, Jan £98.54) Total for 2017 - £2,495.10
