    I don't know whose idea this was, but we have people leaving at work and next Wed we are having a pot luck lunch. We all have to take something to eat and because of the eating habits of most of my colleagues, it will need to be veggie, which I'm not.

    The boss is making sausage rolls, someone else is making baklava...and I'm completely stuck for ideas. We have a microwave, but I guess really I'm looking for picnic type food that I can make ahead and we can eat cold.

    Any suggestions people?

    pasta salad? Roasted vegetables? Couscous salad? Rice Salad? Potato Salad? Can you see a theme here :rotfl:

    I'd second a couscous salad - maybe with some feta cubes tossed in :D

    Mini quiche, spring rolls, veggie somosas etc

    wrap sandwiches - roasted veg and cream cheese is lovely.

    Veggie sushi

    You could go down the dips route mexican style - salsa, guacomle, refried bean dip plus tortillas chips.

    I'm getting quite into this now ;D
  • Buy a french stick. Slice fairly thinly on a slight diagonal. Pop on some cranberry jelly (or other suitable relish/jelly). Slice of Brie on top. "Toast" in oven until the cheese melts a bit and the bread is a bit crispy. Cool. Can be eaten cold and still tastes delish. (I've used this many times as canapes at weddings).

    How about a falafel salad? I'm yet to meet a veggie who's not a falafel fan. Could add some feta, and/or cous cous. Little effort, big yummmmm!

    ive merged this with our quick cheap and easy veggie meal threads.

    If your colleague is making sausage rolls, have you thought about veggie sausage rolls? there are some ideas in this thread. My boyfriend is veggie and would really appreciate someone doing that as they can be expensive to buy

    Veggie collection may also give some ideas

    Hi there,

    I don't know if anyone has any, or a link to where I can get some, but am after some more veggie reciepes. My son has been veggie for a couple of years,- the only one in the house hold who is - and I want to try and help him vary things a bit. At the min we cook a lot of lasagnes/spagetti sauces, lentil burgers etc, but just looking for fresh inspiration.

    I have looked on a few recipe sites like bbc food, but just wondered if you guys had any?
