    any ideas what do make with some stores own weetabix I bought that are yukky....don't want to throw them away.

    Anyway got Mrs M's courgette muffin recipe?

    Am on my second GC challange and I seem to be more organised this time (hopefully :rolleyes:).

    To all those who are just starting out I overspent last month and was quite anoyed with self.
    But when I sat down and looked at the bills I realised that in march I spent £150 (ish) on food, by learning from and following this thread I had managed to get it down to £90 (ish).

    So on reflection not that bad, just needed to be more realistic with my figures :rotfl:

    If you go onto Slimming World website they have a recipe for scanbran cake, which is luverly, I am sure you would be able to adapt that.

    Hope so anyway

    Sorry I've been a bit AWOL lately - travelling way too much with work and the internet's wonky at home.

    Anyway, I'm in again this month and on the weekend I did a big on line Tesco shop with a money off code costing £49.49 (call it £50!) but I'm countimg £25 out of April and £25 out of May's budget.

    My total budget this month is

    £100 Mrs M

    for all toiletries, food, dog food and cleaning stuff.
    My month will end on May 29th.

    hope this is what you are looking for

    COURGETTE TEA BREAD


    pre-heat oven to 180c/350f/gas 4
    grease a 2lb loaf tin and bottom line with greaseproof paper - make it so it comes up the narrow edges so you can use it to lift it out

    1. 1 large egg
    2. 125ml sunflower oil
    3. 175g courgettes -trimmed and grated (on large holes)
    4. 150g wholewheat flour -i used ordinary
    5. 1/2tsp baking powder
    6. 1tsp bicarb
    7. 1tsp ground cinnamon
    8. 175g soft dark brown sugar
    9. 75g sultanas
    10. 3oz walnuts chopped

    * tip courgettes and all dry ingredients into a large bowl and mix well
    * whisk egg into the oil and pour into dry goods
    * mix to a thick batter and pour in tin
    * shove in oven for about 1 hr or until a skewer comes out clean..cool in tin for 10 mins before turning out to cool

    How is THAT for a method? ...chuck it in, stir it round..job done
    when cutting you will need a really sharp knife as its lovely n sticky and This will keep in a tin for 1 week.... or can be frozen.
    i made 38 mini muffins and they took about 15 mins a batch and if you let them stand for a few seconds in the tin they firm up and are easier to remove

    These are also nice if you add chocolate or cocoa powder, and if you grate the courgettes up fine or whizz them in a blender the kids won't notice!!!;)

    Tylersbabe, sorry to be a dimwit, but if I'm make the muffins, it's the same mixture, just put into muffin cases other than loaf tin???

    And what flower did you use - it says ordinary...plain, SR...I'm new to all this cooking lark, despite mother being a great cook and having a GCSE in Home Ec (it's hard living in the shadow of a great cook!)
