  • hi catznine - it's not a recipie as such (although I'll stick it in the index if anyone thinks I should)

    Basically I just fry off some onions (I used red today because that's what I had, but normal ones are probably better :) ) - I tend to work to one onion per person as about right but it depends what I have in (and I LIKE onion :D ) -until they're translucent (rather than browned) then put them in my large casserole dish

    Brown off the beef in the same pan until bit by bit so it can get evenly browned and making sure all the blood from the pack goes in as it's the tasty bit :) - adding the beef to the casserrole once it's brown on all sides (tongs are very useful for that bit...)

    If the beer is in a can with a widget I open it early and pour it out so it's not uber foamy, otherwise I then "deglaze" the pan with the beer - adding it slowly until the whole can/bottle is in the pan and boiling (try not to breathe the vapours, as it's alcohol and goes straight to hangover not passing inebriated on the way)

    then I add 2/3 cans (drained and rinsed) of whatever beans/pulses I have in the house (flagelot and Canellni seem to work particularly well, but I just stock up on anything on offer) and enough water to cover the meat etc in the casserole. Then I bung it in a hot oven (to start with, once it's boiling whatever temp you need for the rest of your cooking is fine) for about 3 hours.

    It's nicest reheated the next day or from frozen. If you want a thick "sauce" choose enough beef to just about cover the bottom of your pan, reserve until the rest of the meat is cooked, then roll the chosen beef in flour before browning off (add a little extra oil for that), Then add the beer bit by bit to the beef that's still in the pan (covered in flour and looking repulsive usually!) to effectively make a roux. I find that I'm fine without the flour and just serve with rice or mash to take up the juice. :D


    My beef is still in the oven with my roasties (just turned) and due to come out to cool in twenty minutes. I've two large bowls of fresh chicken stock cooling, a pie (for two) on the rack cooling (I think it's actually chicken and Kohl rabi rather than what I'd call swede) , a bowl of chicken and unidentified root vegetable in white onion sauce cooling to go in the fridge and become pasta bake tommorrow (enough for 3/4 I'd think), the stock bones cooling for a final pickover for soup and still loads of chicken in the fridge to make chilli tommorrow - I'm KNACKERED :D but quite proud of myself altogether.
    Pre O/S: what's a vitamin? Does it begin with the letter e?Now: I'm not eating any of that pre-made rubbish...

    Keeping my fingers crossed for you today, hope the check up is not too painful and shows an improvement.

    I woke early again - 4.30 - but decided to stay in bed and read rather than get up and start housework. It's been a busy weekend. We stood on a car boot yesterday (managed to sell quite a lot) and made chutney and jam over the two days.

    Back to work today. Ah well. I do love my weekends now that we are living OS!

    Back to work today, the weekends just go too quickly. House is looking pretty good after a weekend of blitzing, the aim is to not mess it up during the week!

    Plans for tonight: Ironing, grilled salmon for tea, sort out recipe book shelf in kitchen (not necessarily in that order!).

    P-P......hope all goes well at the hospital for you today,will be thinking of you.
    Well i have a lot of washing today as not done any for a few days but weather is looking a bit dodgy so not sure,our tumble drier is in building out back and needs extension lead running from house so if its peeing down dont even want to do that :-(
    first job of the day will be bathing dd1(2.5) who is sat feeding herself her co-co pops and looking very messy!!
    need to sort,cook and puree a load of very cheap reduced veg i got from sainsbury's yesterday for dd2(5 months).....was a very good trip also got two whole ducks for £5.00(£2.50 each instead of £10 each :D ) one we ate for tea last night with wrapa,salad and hoi sin sauce and the other was cooked and will be eaten with stir fry tonight(2 huge bags stir fry 20p!!).
    mountain of ironing sat looking at me :eek:
    will make cornflake cakes and jelly for dd1 for deserts......will be making them with her so very messy but very fun!!
    and this afternoon/evening the kitchen will be getting a thorough cleaning thanks to the cake making activity!! :rolleyes:
    other than that and general children involved things just generally mooching around on here i think :rotfl:

    Morning everyone. Best of luck to you PP, hope it all goes well!

    Not back to work until Thursday. Returned from hols on Saturday and have a HUGE mountain of ironing, may save it for tonight though.

    DS1 not back at school until Wednesday, still got to sew in his name tags.

    Will spend the day catching up with my mom, sister, neice and nephew. DS2 goes to nursery today so its just me and DS1.

    Have some stuff to do before tomorrow - my FIL's funeral. Not something I'm looking forward to!

    Good morning all - dd's went back to school this morning .....both had a few tears at breakfast .....DH went back to work after a 2 week break too, so feeling a bit peeved already.

    Working today - one lot arrive in a bit and then go home just intime for me to pick DD's up from school along with 2 new charges....can see today will be busy!

    Went to our concert last night - G4 and Katherine Jenkins....was fantastic - DD1 was over the moon when she climbed on DH's shoulders and managed to get 2 of the group to wave at her..made her year! We left early to get DD's into bed as they were both dropping but very enjoyable.

    Got to have a serious look at the cupboards and the freezer this week - so much stuff needs using up, good news is tho that I'm working all week and can't get to any shops so won't spend anything!! :j

    Roll on next weekend - I think it's going to be a very long week!

    I can see why you are fed up when his father did not get his injury checked out - especially as he had time to take him for a meal - while you had cooked tea!

    Good luck and I hope things get better.

    Did 4 wasloads and hanging them out. About to make home made rolls then may take daughter out for a few hours.

    Still need to put labels in school clothes etc for tomorrow - may do it later while watching tv.
