Afternoon Jumps,
Would you mind posting some recipes? Do people have a day that they would prefer to 'weigh in'?

Hi, How about a Monday weigh in?
One of my favourite recipes is Lemon Chicken with leeks and rice.
1 tbsp olive oil
1 leek, finely chopped
125g risotto rice
1 chicken stock cube, dissolved in 1pt (20fl oz) hot water
1 tbsp plain flour
1 tsp ground ginger
Finely grated zest of one lemon
4 chicken breasts
Juice of 1 lemon
2 tbsp light soy sauce
50g frozen peas
Heat the olive oil and add the leek and rice. Cook gently, stirring, until the rice is translucent, about 3 minutes. Add the stock, a ladleful at a time, allowing the rice to absorb the liquid before adding more. Mix the flour, ginger and lemon zest and season. Roll the chicken in this mixture. Preheat the grill. Mix together the soy sauce and lemon juice. Arrange the chicken on the grill and brush with lemon juice mixture. Cook for about 8 minutes on each side. If rice is cooked add the peas and cook for a further 3 minutes. Serve with chicken on top of rice on a plate.
I sometimes replace the leeks with an onion.

I'd like to join in with this please!
I am doing (not very well!) Weightwatchers online. I did lose quite a lot but then put a load back on again which I am gradually trying to lose again. I don't mind saying how much I weigh - I am currently 14st 6lbs. A week ago I was 14st 7lbs, a week before that I was 14st 8lbs and before that I had been 14st 2lbs for ages. My start weight was 14st 11lbs and my lowest weight (this time!) was 13st 13lbs. I would dearly love to get back down to below 14st again (as a first target!)
My weigh-in day is a Friday.
Good luck everyone.PigginSkint's debt free diary

My usual weigh in day is Wednesday as that is the day i would normally go to classes... I also found I did better with a Wednesday weigh in than a Monday one (yep I have a weird brain), so will probably stick to weighing myself on a Wednesday morning.
Think I may have thrown out my old WW books in my last get decluttered mode in the house! We made it! All three boys have graduated, it's been hard work but it shows there is a possibility of a chance of normal (ish) life after a diagnosis (or two) of ASD. It's not been the easiest route but I am so glad I ignored everything and everyone and did my own therapies with them.
Eldests' EDS diagnosis 4.5.10, mine 13.1.11 eekk - now having fun and games as a wheelchair user.0 -
Sophie, I've got that book too, the food in it looks really yummy but I have o say that some of the ingredients seem quite fatty (ie they seem to use a lot of oil etc)
I've noticed that. They only seem to care about the calories so I put my WW head on when cooking them and subsitute certain things and leave too fattening extras. Cheese in soup? Noooooo. It Will be Mine.............ITV Cash Win, Ipod Touch & Spa BreakI have the comping bug!0 -
