Have just thought of a quick one which is like quiche. Frittata,
SPINACH, PEA AND MINT FRITTATA.
GREEN-1.5 RED 2.5 syns
Fry light
4 spring oinions 200g spinach leaves
1 red pepper 100g frozen or fresh shelled peas
3 tbsp of chopped mint 6 large eggs beaten
30g of parmeson cheese (or your choice) grated
salt, pepper
1. spray a large non stick pan, add spring onions fry gently 2-3 mins
2. add chopped spinach, peas and pepper, cook until spinach wilted.Add sesoning to taste.
3.stir chopped mint into beaten eggs, pour into pan and fry gently until base is brown and set.
4. preheat grill, sprinkle on cheese and grill until top is set
and golden.
leave to stand, for a few mins and serve in wedges with salad or choice of veg, sw chips etc or baked potato.

I also like cottage cheese and prawns as a sandwich filler or with salad.
Hard boiled eggs with cress and low fat fromagefrais (although i prefer this with cottage cheese as well. both fillings would be syn free depending on day.
Spicey chicken, add your fav spice mix to chicken pieces and grill-free on red
Tuna crunch-
1 level teaspoon of low fat mayo (2 1/2 syns) with tuna.
add finely chopped crunchy veg, cucumber, peppers, and spring onions.
If you replace the lf mayo with low fat fromage frais/cottage cheese-free on both days.

I got given a box of 'Hotel Chocolat' chocolates and two bottles of champage at work.....eek!! Haven't managed to stick to it today, but considering I have such appalling pmt and have had a Really Bad DayI think I have one a reasonable job of damage limitation.

Gosh, that sounds scary Bob, thanks for the sympathy. I'm just being a wuss in comparison...lol. Mine's not so much the pain (it does hurts
but I can control it with normal paracetamol), it's the mood swings. I'm prone to getting anxious about things, but I've never swung from one extreme to the other as much as I have done since my periods restarted after having Natasha. Just hoping its because they're still settling down. I felt quite unhinged this evening and burst into tears in the loos at work because I couldn't get holiday for Natasha's birthday (which I can probably arrange a shift swap for anyway)!

i hope everyone whos started this already is stayin on the sw wagon
im goin to write a meal plan for next week and start on monday, ive used the password and have been lookin at the sw site and thought id share this dunno if its any use to anyone
obviously we're all on a tight budget so i looked at the students section of the site and theres some really good ideas on there and some really good quick and easy recipies which are good on the pursestrings too
i'll post my meal plan when ive done it if thats ok and you can all let me know if ive done it right according to the food groups etcDebts @ 10/03/08 15333.75
