Yeah, if you put it in at 10.30 and you're eating at 5.30, leave it on low. That's gonna be one tender piece of meat, maybe too tender!0

Hi sammy kaye,
We have a long thread on brisket that should help so I've merged your thread into it to keep all the suggestions together.

I have a thing of brisket in the fridge, have I left it too late to cook it for tonight????
Not sure if I can just roast it like a joint or if it needs a slower method of cooking???
None of my books have it in.
Would any kind person be able to tell me what to do with it???0 -
Try this older thread - beef brisket in slow cooker.
I do mine in the oven, in a similar way, and depending on the size of the joint, it takes about 3 hours, so you're in plenty of time for tonight.

Oh thank you thank you thank you. I am off to do that (easily excited)0
-
Oh I love the pictures !!! How cool.
Next questions, Do I need to cover it, wrap it in foil, stick it in a casserole dish with lid? Add any water? Or just stick it in a roasting tin ?
Sorry!!0 -
Do I need to brown it first. (Thats it no more questions honestly)0
-
OK, I brown it in a casserole in beef dripping, or olive oil, with some big chunks of onion and carrot, whole garlic cloves, bay leaves, peppercorns.
I then add beef stock, or red wine to about half-way up the joint, put on the lid, and cook on low (gas 2) for several hours.
Please ask if you have more questions - that's what we're here for!
Don't forget the Yorkshires, and what time's dinner? I'll bring a bottle of red!
