  • I'm making a basic curry recipe tonight and bulking it out with new potatoes, chickpeas and a bag of spinach right at the very end. It's delicious :D

I searched for spinach soup and got this thread...brilliant:T

I would never have thought of so many things to do with it.
If I think of spinach it brings back memories of my junior school dinners where we were served plain boiled spinach, yuck!
put me off it for 30 years.

I will be trying several of the ideas here so just wanted to say a big thankyou :D

this is a recipe i found ages ago and feeds 4

    350g penne pasta
    300g spinach
    1 tbsp oil
4 chicken thighs (deboned and skinless cut into strips u can also use breast)
    1 garlic clove (finely chopped)
    425m/3/4 pint semi skimmed milk
    25g plain flour
    25g butter
    140g mature cheddar (grated)
    grated nutmeg to taste (optional)

    1 cook pasta
2 whilst pasta is cooking, cook chicken and garlic once cooked set aside
3 add milk to a pan, sprinkle in the flour, then add the butter and whisk over medium heat
4 once sauce has thickened and is smooth then stir in 85g of the cheese, nutmeg and season to taste
5 place all cooked ingrediants in a baking tray then add the spinach mix together well
6 then add remaining cheese on top place in the oven at 200 and cook till golden usually 15 minutes

    hope this helps

    Creamed spinach is gorgeous.

Bear in mind that when cooked in even the tiniest bit of water a huge bag of spinach wilts to about 3 spoonfuls ;)

How about a big frittata. Soften some leftover veg in frying pan ,add spinach. Pour in some beaten eggs and a bit of cheese. Cook until set the finish it off under the grill. Great for using up odd mushrooms etc that I always find in the fridge. Can be eaten warm or cold the next day for lunch :j

    Hi Ell :hello:

As there isn't alot of it, I'd just stir it through any kind of pasta bake but it goes particularly well with chicken and mushroom.
  • Use it in a stir fry, make a lovely healthy soup with some potatoes and spinach, add to lamb or chicken in a curry, or for a veg curry with mushrooms and potatoes, just as a veg with black pepper and a bit of nutmeg... I use it loads, so feel free to ask for actual recipes (or try the index!) - not v technical so (still!) can't do links!!

PS Next time you are buying - if using cooked, get the frozen stuff - it's in nugget sized portions, and costs about a tenth of the price fresh stuff and is fine for most of the above ideas!
