    My ds sits with a bag of spinach and eats them like a packet of crisps, must admit I love them raw, usually in a salad or as a sandwich filler along with ham/cheese and wholegrain mustard.

    If fairly small and young leaves, very good to make a salad with orange segments, dress with olive oil and balsamic vinegar. Orange complements spinach very well because the iron in spinach is bound by oxalic acid (a chemical that prevents it release) and the vitamin C in the orange helps the iron to be released.

    Hi,

    I had a quarter bag of spinach left yesterday and I used it in a noodle salad:

    Cook noodles for 5mins, during the last min chuck the spinch in.
    Drain and rinse under cold water.
    Put tsp or so of garlic (or other oil) on the noodles to stop them sticking together.
    Stir in a tbsp hoummus, some very thin red pepper sticks and some carrot shavings.

    How about pesto if you have some nuts and parmasan?? I know it's supposed to be basil and pine nuts but you can make your own version with spinach, cashews (maybe) oil and parmasan?

    i got 2 bags of organic spinach for 40p at Asda, we ate a bit as salad with our Bar-b-q, but i need to do something with the rest now ish......So i'm after recipes again please :D .

    Cook the Spinach with garlic and a large onion in a wok or large saucepan, DRAIN WELL, put back into large sauce pan, add 4 beaten eggs, pepper and a pack of feta cheeese broken up.

    In a large dish, line with half a pack of filo, put half the mixture in, then top with the rest of the filo.

    Bake on Gas6 for half an hour.

    Hubby loves it.

    spinach and chickpea curry
    chop up one onion and 2 cloves of garlic
    fry up the onion and garlic, add the curry spices (pre pack or your own mix) and fry them in the oil until freagrant. Add chickpeas, with the water from the can. Simmer 5-10 minutes to warm the chickpeas up. Add some yoghurt or coconut milk. Wilt a bag of spinach on top, serve with rice.

    stir fry spinach with mushroom and pine nuts
    chop up one clove of garlic. Fry with mushrooms until they are cooked, then add pine nuts. Add spinach just before serving. Serve as a side dish

    Spinach frittata
    Beat up 2 eggs well, add a splash of milk and about 2 tablespoons of plain flour. Pour the eggs on a big omelette pan, cook on a low heat, when cooked halfway through add the spinach on top, wilt and then flip it over. Cover it when cooking and it should puff up. Serve with grated cheese melted on top
