    Chop it in a blender and freeze it add to curries, stews or reserve with butter as a veg.:D

    Just wilt it on its own in a large saucepan, drain excess water, add butter, cream and nutmeg and serve as a side vegetable.

    My family all adore it, including two teenagers and an OH who thinks that, generally, vegetables are a waste of good meat space.

    I bought a HUGE bag of spinach because i really fancied fish pie and there wasn't anything smaller. Now we have had Fish pie, and a Spanish style omlette, but have still got about half a bag left. Any ideas?

    Could always try fishcakes.

    I use mash, flaked fish that has been poached in milk (an old trick my mum taught me lol) finely chopped spinach (after it has been cooked and cooled) make into fish cake shapes then coat in flour, beaten egg, breadcrumbs then fry, grill or bake

    Oh yes, don't forget to season with salt and pepper (if required of course)

  • I just like it fresh and raw in salad. I have no idea whether you're meant to eat it like that, but I've never been a big salad fan so I figure one that includes ANYTHING is progress.

    might not be your cup of tea but spinach goes really well with lentils, especially red lentils but I have also used green or puy.

    So if you find a recipe for lentil soup, or lentil bolognaise or lentil curry or any of the fab lentil recipes out there, then add about two or three generous handfuls of chopped spinach and either liquidise them (in case of soup) or just stir them in till they have wilted and started to add and absorb flavor.

    Also, if you are into sweet potatoes or squashes, I make a really nice 'alternative' to mash which is basically

    1 sweet potato/half a butternut squash
    1 parsnip, diced
    1 carrot, Diced
    Knob of butter
    2 handfuls of chopped spinach
    Drop of milk or light cream
    Salt (pinch)
    Pepper (pinch)
    Any other herbs e.g. rosemary, thyme, whatever floats your boat.

    Basically just chop, dice and boil your veg for at least 20 mins, add the spinach and simmer for 5 then drain and put in a mixing bowl.

    Add the butter, cream, seasoning and herbs and just mash like mash potatoes.

    My OH loves this he calls it sneaky mash as he says I am trying to sneak vegetables into everything! What can I say, veg rocks! :D
